It’s going to be a hot topic this week so get ready but I have to give a shout to all the 7-Day Green Smoothie Challenge participants. We’re up to about 85 now! I am LOVING all of the recipe suggestions and have so many ideas for new combos to try this week.
I stepped out of my comfort zone a little today and used raw kale in place of spinach.
The verdict? Delicious! My favorite thing about today’s smoothie was that it was not overly sweet. Here’s what went in the blender…
5 kale leaves (stems removed)
6 ice cubes, crushed
1/2 banana
1/2 cup vanilla soy milk
1/2 cup unsweetened almond milk
4 strawberries
1 tablespoon ground flax seed
I also had toast with crunchy peanut butter and honey. It was a delicious and sustaining breakfast. I got my greens and peanut butter in. Can’t ask for more than that! ๐
I made a “real” lunch today. I don’t know why but when I cook something for lunch it always feels different than just making a sandwich or salad. I made a Greek couscous bowl.
1/2 cup whole wheat couscous
1 cup chicken broth
1/2 cup chickpeas
Dried oregano
Dried basil
Chopped kalamata olives
Chopped artichoke hearts
Diced tomatoes
Salt and pepper to taste
Feta
I put everything but the feta in the saucepan and brought the mixture to a boil. I reduced the heat to very low, covered it and let it cook for about 5 minutes. Once cooked I fluffed it and stirred in some crumbled feta. I served it in a bowl over spinach and topped it with hummus and greek yogurt. Multigrain pita chips on the side. This lunch seriously took me 10 minutes to prepare and it was delicious. It made enough for two servings so I have an easy leftover meal for later in the week. I had a handful of green grapes to finish my meal.
I have to rewind to last night’s dinner. It was kind of sad.
I made a salad with the leftover eggplant parmesan slices. It was a good salad but just left me kind of unsatisfied.
So this happened.
I drove to TCBY barefooted. I was sure that I had flip flops in my trunk. Well, I thought wrong so I took a moment to ponder going into TCBY with bare feet but decided that probably would be a little desperate. I drove back home and back to TCBY. When a girl needs her ice cream, she needs her ice cream.
Side note to proclaim my love for mochi (the marshmallow looking things) – cannot get enough. They have been a constant in every cup of froyo I’ve had for months.
Off to figure out tonight’s dinner. Here’s hoping it’s better than last night’s!
That smoothie combo sounds excellent! Spinach is the only green that my blender will blend. If I used kale, I’d be chewing my smoothie. Which isn’t really my scene.
haha – i have a pretty crappy blender too. i have to let it do it’s thing for a solid 60-90 seconds.
we got a vitamix (I saved for a year) about 6 months ago and it has been used EVERY day that we have owned it. Most days it is used more than once.
I highly recommend that you do research on good blenders (there are several) save for one and invest. It is soooooo worth it.
I always have a piece of toast with PB with my smoothie too. Today I had soy milk, strawberries, spinach & blueberries. I’m cracking up at the thought of you outside the yogurt place, why didn’t I wear shoes!!! ๐
i don’t know why but unless i just really bulk up my smoothie with peanut butter and protein, i feel like i need something else…and honestly i would rather have my PB on the side on toast! ๐
Just made my smoothie for tomorrow morning! This is my third morning in a row! In the mix was spinach, kale, almond-coconut milk (by almond breeze- so good!) chia seeds, cottage cheese, vanilla and cinnamon. Had a taste and it was delish! Love to have it in a bowl with a little peanut-butter cheerios sprinkled on top!
I’m pretty sure this 7 day smoothie challenge will be extended for me!
heyley – what a delicious sounding combination. i am definitely going to do coconut milk in one of my smoothies this week. how was the cottage cheese in there?
I love mochi too!! I always get mochi, honey, and capt. crunch as my toppings!! I had another good smoothie today. Have you tried using frozen spinach? It makes it a little thicker!
i picked up some frozen spinach at the store this week but haven’t used it yet. trying to get through my fresh spinach and kale.
i love cinnamon toast crunch as a topping too!
I am enjoying my green smoothies. They are so tasty and filling. I am certainly going to extend my 7 days! I enjoy reading daily and love your gourmet food ideas–I have tried lots of your food ideas.

Excited about this challenge! I’ve been getting my daily green smoothies in and loving on it! Haha I love that you considered going into TCBY barefoot, I’m sure they would have been impressed ๐ And I see that in your smoothie pic your shirt in has thumb holes, do those not rule!! I seriously love thumb holes hah

Ya…I’ve driven to two different frozen yogurt places because they didn’t have “my flavors”…not my finest moment, but I can relate to the dedicating of driving to get your fix.

Yesterday: soy milk, frozen blueberries, banana, spinach.
Today: soy milk, kiwi, frozen strawberries, spinach, lemon juice.
That sounds like me running to DQ for an absolutely must need blizzard. I often go in my PJs ๐

I totally would have walked in barefoot. But that’s me. I clearly want to be like Britney Spears. ๐
haha – i was definitely one of those children who were in the grocery barefooted when i was younger! gotta love growing up in south georgia ๐
On Sunday I blend a green smoothie “base” for the week: kale, spinach, green apples, green grapes, pears, coconut kefir and water. A squeeze of lemon or lime keeps it green. Then I pour into five containers and freeze. Each morning I take one out, defrost for 30 secons, pop into the blender and add various fruits: strawberries, blackberries, blueberries, cranberries, peaches. Delicious!

What is mochi?! I’ve never heard of it… but I can bet it tastes amazing on frozen yogurt…. throw anything on top and I’m a fan!
it’s a japanese confection made from rice – it’s like a little marshmallow but chewier and so delicious!
