How does it happen that the days I think I’m going to get so much done and have some free time always end up being the craziest? Today started out with an easy morning but once noon rolled around it was nonstop until I got home at 7:30.
I slept in until 8 and then made a breakfast that I haven’t had in months…overnight oats! I have been doing a lot of yogurt/fruit/granola recently but I’ve missed having the oats mixed in with the yogurt. It’s a totally different texture than the granola combo. I only let this sit in the fridge for about 15 minutes this morning and it was still perfect. I did oats, chia seeds, plain Greek yogurt, skim milk, dried cranberries, golden raisins, apples, bananas and cinnamon. Topped with a little bit of apple butter and a lot of sunflower seed butter.
I trained a client at noon and then taught a lunchtime yoga class at Charlotte Athletic Club. I rushed home and ate half of a bagel with peanut butter, honey and banana while I got ready for a photo shoot!
Here is a sneak peek! The amazing Wanda Koch offered to shoot some new photos that I can use for my blog and social media. We did a fun theme of hybrid yoga/run. She sent me this preview and I can’t wait to see the others! (And yes, I know I need a hair cut. ;))
After the photo shoot I had an appointment and then taught BodyPump at the Y. I was so ready for dinner when I got home and was craving scrambled eggs. I made a quesadilla with eggs, black beans, cheese, sour cream and salsa. If you’ve never tried scrambled eggs in a quesadilla, you must! A big salad on the side because I needed a big dose of veggies.

So from your shoe collection it looks like you also wear the brooks Adrenalines…do you recommend any of those Nike shoes in that pile for running? I need the support that the Adrenalines provide.

i used to wear adrenalines but after many years just switched to an asics stability shoe. the nike’s were my photographers so i can’t give a review on those.

Can someone please explain overnight oats to me? They are on so many health blogs and I’m obsessed with yogurt and granola so I think I should try this? Also your meals are always so varied and awesome ….I need to copy!!!

What a fun picture! I have never thought to incorporate scrambled eggs in a quesadilla but it sounds fabulous! Will add that to our dinner menu next week! Thanks for the idea! My favorite fillings are grilled chicken or steak, bell peppers, grilled onions, black beans, spinach and a little cheese.

Hit submit too fast! We LOVE quesadillas and usually have them about twice a month. My favorite fillings are seasoned shrimp w/ peppers and onions or goat cheese, roasted red pepper, and chicken. Now I’m dying for a quesadilla….

I’ve done the egg in a pita and it was so delicious! I’ll have to try it in a quesadilla.
A couple of weeks ago I had a quesdilla that was filled with chicken, cheese, cilantro and topped with tomato salsa and mango salsa! It was the best quesadilla I ever had. 🙂
