Hey friends – I’m sitting in the hair chair getting my roots looking good again. My color appointments are closer together these days than I ever thought they’d be but I don’t mind the time to sit and chill with my laptop after a busy morning working – and the fresh blowout is pretty nice too! I try to stretch out the time between appointments and have used all of the various root cover up sprays and powders but when you work in fitness and teach hot yoga – that gets messy. I’ve had so many unfortunate incidences of walking around with a big dark smear on my face haha.
While I’ve been sitting here – I put together part two of my recent eats with lots of dinners for ya! One thing I like about this recent eats recap is the variety of proteins – we’ve got chicken, salmon, shrimp, beef, tofu and turkey. I hope you enjoy!
WHAT I’VE BEEN EATING LATELY – DINNER

Veggie-packed turkey meatloaf with roasted potatoes and roasted broccoli. I love this recipe and I will forever love meatloaf. It’s such a comfort food for me and reminds me of my Mema.

Orzo and veggie skillet with shrimp. I sauteed zucchini, broccoli and mushrooms and then added some chopped peeled and deveined shrimp and minced garlic in the last few minutes. I added cooked orzo to the skillet with sun-dried tomatoes, feta and jarred green pesto. I finished it off with a sprinkle of parm.

Air fried chicken breast with roasted sweet potatoes and sautéed broccolini with a scoop Cedar’s hot honey hummus on the side.

Air fried tofu, frozen Asian medley veggies cooked in a skillet and jarred golden coconut curry sauce over steamed basmati rice.

Finn requested burgers on the way home from soccer practice one night so burgers it was! I had mine with melty gouda on a brioche bun. He ate his bun and patty separate. Roasted brussels and delicata squash on the side.

Leftover burger patties turned into a delicious burger bowl! I crumbled the patty and served it with roasted sweet potatoes and leftover brussels over some rice with the yummiest homemade special sauce. This is what I put in it:

- ¼ cup mayo
- 1 tablespoon ketchup
- 1 teaspoon yellow mustard
- 1 tablespoon pickle juice
- 1 tablespoon chopped sweet pickles
- Dash of garlic powder and paprika
It really added so much to the burger bowl. Will definitely make this again!

Giada’s Chicken Florentine served with rice. I made this recipe for a birthday dinner and it was easy and very good. Will definitely make again. My only recommendation is to use fresh spinach instead of frozen.

THIS IS NOT PRETTY but it tasted good so let’s roll with it. I promise – natural light dinner photos are coming now that the time has changed and the days are longer. Roasted salmon over rice with a bagged stir fry veggie blend that I sauteed. I served it all with that same golden curry sauce.

While we’re on ugly saucy dinners that tasted good…sauteed chicken sausage and roasted brussels over couscous with Bitchin’ Sauce.

Takeout from Flower Child. This is the Glow Bowl with sweet potato noodles, shiitakes, onions, snap peas, cilantro, mint, sunflower sauce and salmon added.

Three ingredient pot roast with roasted cauliflower and sweet potatoes.

Dinner salad with greens, roasted delicata squash, grains, air fried chicken breast, goat cheese and dried cranberries. Dressed with olive oil, balsamic and sea salt.

Air fried chicken thighs, sauteed cabbage and steamed brown rice.

Buddha-esque bowl. I roasted Trader Joe’s frozen mushroom medley, tofu and sweet potato on a baking sheet and then served it over a grain blend from a pouch with green peas and a scoop of hummus. This was a “going out of town the next day – eat whatever is in the fridge/freezer” dinner.

And sometimes dinner looks like sharing chicken tenders and waffle fries with your kiddo at a basketball game! To be honest, I didn’t grow up a big chicken nugget/tender lover but have come to gain an appreciation for them as a mom.

It was pajama day today and he was pretty excited about that!

Hi Jen, this isn’t related to your recent meals. You mentioned awhile ago that you bought the Aora Ring. I am wondering how you are liking it. Is it worth the price + the monthly fee?
