I’ve somehow gone from posting recent eats on a weekly basis to monthly. My last post was in May when I shared 20 things I had eaten recently. Well, here I am again with 24 more things…mostly dinner. I love sharing these posts with you and I consistently receive feedback that y’all love them too and find them useful. That said, I’d love to hear whether you like the style of this big monthly roundup or prefer the weekly posts.
BREAKFAST
This is the only breakfast photo I have to share! I have been doing a ton of cottage cheese scrambled eggs, fruit and a Dave’s Killer Bread cinnamon raising bagel topped with cream cheese and butter. I usually share my bagel with Finn and end up eating at least half of his half.
LUNCH
Y’all know I’m usually smoothie bowl every day for breakfast kind of girl but I’ve been having them for lunch instead. It’s so hot in Charlotte during the summer and a cold smoothie bowl midday at the heat of the day has been sounding delicious.
There have also been plenty of turkey sandwiches with avocado, cheese and pickles. Wondering when I am going to burn out on this combo???
And salads! This was a spinach arugula mix with grapes, hardboiled egg, tomatoes, radishes, pistachios, dried cranberries, avocado and hemp seeds with Tessamae’s honey poppyseed dressing.

DINNER
Baked salmon, roasted okra with feta, baked sweet potato.
Curry spiced chicken fried rice from Blue Apron. I had a gift credit. Sometimes when I get Blue Apron recipes I feel pretty “meh” about them but then they almost always surprise me and are so good. That’s how it went down with this one.
This steak salad was a nice change for dinner. Massaged kale, flank steak, radishes, carrots, pistachios, sautéed mushrooms and a drizzle of ranch.
Love The Wild Red Trout with Salsa Verde, couscous and salad. The Love The Wild parchment packets are so super easy to throw in the oven for a quick dinner.
One pan roasted dinner with chicken leg/thigh quarters from my favorite local farmer, fennel, brussels sprouts and potatoes.
Yum, yum. There is nothing better than bone-in, skin-on baked chicken.
PaleOMG pizza spaghetti pie, roasted broccoli, toasted sourdough with butter.
Salad with cucumbers, carrots, feta, pistachios and perfect chicken breasts. Dressed with Tessamae’s honey poppyseed.
Greek-style feta burgers on a homemade burger bun with tomato and basil. Side salad and tater tots (yessssss).
Takeout Thai with my mom. We shared green curry and pad Thai.
Chicken breasts stuffed with mozzarella and topped with tomato basil sauce. Served with pasta and green beans.
A random but delicious bowl of quinoa, sautéed pork sausage from the farmers market, sautéed turnip greens from the farmers market, black beans, corn, plain FAGE 5% total greek yogurt and salsa.
Baked salmon, mac and cheese, sweet and sour collards.
Pork tenderloin cooked with a brown sugar dion glaze with kale salad, sautéed pattypan squash and roasted potatoes.
Spinach/arugula salad with quinoa, toasted pecans, feta, dried cranberries, avocado and salmon. Dressed with Tessamae’s honey poppyseed dressing.
Dinner out with my mama at Burton’s. We both had a risotto dish with chicken, artichoke hearts, tomatoes, spinach and some other good stuff.
Finally, a prettier picture of my birthday dinner! 🙂 Trader Joe’s gorgonzola gnocchi (you can find this in the freezer section and it’s really good) with fresh spinach stirred in and topped with sautéed mixed mushrooms from the farmers market and crispy prosciutto. Seared scallops on the side for me. My mom just had the mushroom gnocchi.

So much ETC…in the last week…
Two nights of the peanut butter chocolate cake that The Batchmaker dropped off. I also had a slice mid-afternoon one day.
Two pieces of peach praline pie (or three???I can’t remember?) with ice cream. This pie was from from The Fresh Market and incredibly yummy. It had caramel baked in and pecans on top.
Lemon cheesecake from Villani’s. Of course I had to introduce my mom to the deliciousness of Villani’s.
My mom is a most excellent influence when it comes to dessert and treats. 🙂
The end. That was a lot!

I like the weekly meal posts. I have been cooking with lots of fresh green beans and basil pesto. My green beans (I have a full raised bed of them) and basil are going crazy over here. Veggie Loaded Pesto Pasta on the menu tonight.

We picked up some corn on the cob and tried cooking it in the slow cooker for the first time. Turned out great & so simple! Super sweet & tender.
Your meals look delicious. A smoothie mid-day in the Southern heat is the best. I’ve been mall gone with frozen dragonfruit cubes, found them at Target; frozen mango, water, and coconut water. My latest food find is Siete chips. They are grain free.I like the ranch flavor.
I prefer the weekly! But either way I enjoy the what I ate posts…always inspires new meals for me 🙂

What ever is easiest for you Jen! It’s fun to see what other people eat and sometimes it gets me thinking, that I haven’t eaten that in awhile!

This post inspired me to make an open-faced version of your turkey sandwich on roasted garlic French bread. Delicious. The pickles and avocado are a great flavour team.

Everything looks delicious! You inspired me to include a few of these on my next week’s menu. Lately I’m experimenting with simple Thai food recipes I get on a YT channel called “Marion’s Kitchen”.
I prefer weekly, but monthly is better than nothing 🙂
Also prefer weekly meal recaps and LOVE when you post recipes. (Doesn’t necessarily have to be detailed with photos and each step listed out. Something really simple like listing the seasonings and how long you cooked the chicken and veggies above = I’ll try to recreate it out of inspiration from these posts.)
