I am always a little sad to bid farewell to long summer days and all of the amazing fresh summer produce but this year I found myself eagerly welcoming fall. I am loving everything from the cooler days to the stunning foliage to warm and hearty meals.
It seems like fall is the season that gets the most hype when it comes to cooking and baking so I wanted to share five of my favorites with you today ranging from breakfast to baking to chili to main dishes.
I enjoy cooking so much and these are recipes that I am proud of and keep coming back to over and over again. I also made a conscious effort to get out of pumpkin-zone on this post (haha). You can click on the images below for links to the recipes.
Acorn Squash Stuffed with Brown Rice, Kale, Cranberries & Pecans
I developed this recipe last year for a campaign I worked on with Success Rice and it’s a wonderful vegetarian entree. If you’ve never tried stuffing acorn squash, you must. The combination of sweet and savory is to die for.
Butternut and Bean Vegetarian Chili
I think fall lends itself so well to meatless recipes. This butternut squash and bean chili is something I’ve been making since I wrote my old food blog, Bakin’ and Eggs. It’s hearty and delicious and the leftovers reheat well.
Maple Apple Spice Bundt Cake
Where do I even start with this recipe? Apple cake is a fall MUST for me and it reminds me so much of my childhood. I developed this recipe two years ago and to this day I consider it one of my best ever.
Cider Brined Pork Loin Stuffed with Butternut Squash, Apples and Cranberries
I developed this recipe last fall as part of a partnership with ALDI. I think this was my first time cooking a whole pork loin and first time stuffing it and it came out so well. It’s such a great main dish for fall entertaining and would be great on any holiday table!
Cranberry Apple Cinnamon Oatmeal
Once the mornings become cooler I’m faced with two options: eat a warm breakfast or have my smoothie in front of a space heater! I eat a lot of oatmeal during the fall and winter because it’s such a warm and delicious start to the day. This cranberry apple cinnamon mix is one of my faves!

Love acorn squash. I sort of use them in place of pasta and fill them with meatballs or chicken and top with anything, really. So delicious. Between quinoa and squash, I can’t remember the last time I touched pasta.

Hi Jen! Now that I can buy spaghetti squash again, I’ve been having that at least a couple of times a week with marinara sauce and turkey meatballs. Not exactly a recipe, but a personal favorite. You know, I’ve never made acorn squash at home, so I may need to give your recipe a try! 🙂 Happy Fall!

I love butternut squash risotto! Made some for Saturday’s supper. I also made some beef and squash stew early in the week.

YUMMY! I am all about chills and actually have a chicken chili in the slow cooker as we speak. Cannot wait to let it sit in the juices all night and all day tomorrow and dive in tomorrow night. I will report back later…XOXO
