With kids heading back to school and Labor Day on the horizon, it’s easy to feel like summer is on its way out. We’re actually 54 days into summer and have 42 left to go before the official arrival of fall on September 22. There’s no doubt that we’ll be seeing all things pumpkin-themed on the shelves in the grocery store any day now but before we jump on that train, let’s appreciate the last of summer produce.
I’ve pulled eight summer flavor filled recipes from my blog archives for you in this post. These are tried and true recipes that I keep coming back to every summer season. We’ve got everything from squash casserole to peach cake to tomato pie and more! I love these recipe and I think you will too.
CHEESY SUMMER SQUASH CASSEROLE
This southern staple is one of my favorite ways to enjoy summer squash. We’ve got yellow squash sautéed with sweet onions and then mixed with a greek yogurt/mayo/cheese filling and topped with crunchy panko. It’s sooooo good!

ROASTED OKRA WITH SRIRACHA AIOLI
If you haven’t tried roasting okra whole in the pod and then dipping it in aioli, the time is now friends! If your opinion of okra is that it’s a bit slimy, you must try roasting it. Game changer. Up the deliciousness of this recipe by sprinkling some feta crumbles over the okra in the final moments of roasting.

I hit to print a recipe to screenshot it and 3 ads came up with it! I’m glad I didn’t print it out with all those ads with it. Lol
I always miss bing cherries and watermelon the most every year! The watermelon this year didn’t have a lot of flavor though and the bing cherries were only on sale a few times. Sad!
Next yr it will better!
Hey! I love cherries too and sadly never got any this season that knocked my socks off.
RE: ads. Can you please email me the screenshots you tried to take? I’d love to send them to my ad company to troubleshoot! [email protected]
Thank you for letting me know!
Jen, you have the best recipes. Your quiche recipe is my go to favorite for breakfast, lunch or dinner! I’m going to try your tomato pie this week.
I am always sad to say goodbye to summer squash, tomatoes and basil. Caprese sandwiches are my absolute favorite summer lunch!
The squash casserole looks great, of course. And I have to say I’m intrigued by the peanut butter banana pudding. Honestly, the only banana pudding I’ve ever liked was my grandmother’s, I’m not sure I’ve eaten it at all since she passed away. I’ve definitely never tried to make it (even though I have her recipe), but I love bananas and pb so I might have to give it a try!
This is my favorite summer pasta dish! https://www.loveandlemons.com/lemony-summer-squash-orecchiette/ The original recipe calls for capers but I never use them (just not a huge fan), I also usually add a big handful of chopped basil.
