Today was all off. It started out with me stumbling out of bed in a half-asleep stupor at 5 a.m. and slamming my toe into a door. Which resulted in a split toenail that left me walking around all day with a half the nail polished chipped off and a throbbing big toe.
And then midmorning I was hit by a wave of exhaustion that stuck with me for the rest of the day. Along with the exhaustion came hunger…and a lot of snacking! It was the kind of hunger that kind of made me feel nauseous. Weird. So as a result of this, along with the fact that I taught yoga before and after work, I ended up taking an unplanned rest day. Eh, it happens.
Breakfast at my desk after teaching a beautiful yoga class this morning was a cinnamon raisin bagel with peanut butter, honey and banana.
I came home for lunch and made a big salad (there’s something about eating a bagel that makes me crave greens). Spinach, apple slices, carrots, dried cranberries, apples, avocado, feta and chickpeas with honey dijon lemon vinaigrette.
We ate lunch outside and Sullie wanted nothing to do with us. Instead, she chose to sunbathe. I think it’s so funny how much she loves the sun.
Over the course of the afternoon I snacked on crackers, a peach and a small slice of birthday cake. Yep, told ya that I was feeling snacky. Does anyone else get hungry when you’re tired? Today was one of those cases where I would have been a little better off had I had healthier snack options on hand at work!
I subbed a yoga class after work and it totally recharged me. I was able to let go of the blahness of the day and really enjoy my time with them. When I got home we made an easy but healthy dinner. (That was waaaayyy “healthy living bloger-ific.”) Grilled chicken, millet and kale chips. Will you believe me when I tell you that Brandon requested the kale chips? Or when I say that Sullie loved them too? I think I loved them least out of the three of us. Have you jumped on the kale trip bandwagon? Do you like them?

My roommate made kale chips and I have to say I wasn’t a huge fan of them either. Maybe they just need to be prepared a certain way that will make them edible.
That bagel is making my mouth water. ๐
Ah, sorry about your toe Jen! Yeah, I’ve tried kale chips. My first attempt was bad- I over cooked them or something and they turned to dust when they touched my tongue. The second attempt was better, but I wouldn’t say I’m such a fan that I want to make them all the time. They’re just okay to me.
Ack, stubbing your toe is *the* worst! I hope the rest of your day got a little better than that! Aw, that photo of Sullie is really cute! My dog loves to sunbathe too.. I took him out with me to check the mail yesterday and I went to open the door when his leash got really tight. I looked behind me and he had planted himself right in the front yard in the sun and would not budge. Haha. I let him bathe for a few and he was in heaven.
I hope today is better than yesterday ๐ Sullie is too precious! I can’t believe she eats kale chips. Nati won’t eat any produce!
Any tips for cooking kale chips? My first attempt was not so great to say the least…
I had a similar problem yesterday. By the time I got off work I was so tired I could barely bother to hold a conversation. I am not sure if I was hungry because I was tired or tired because I was hungry. Ugh! Hope today is better for you!

My daughter’s new favorite snack is kale chips (she is 5). My tip is to “massage” the kale with EVOO so they are completely coated with oil then bake about 10 minutes at 400 degrees. Just until they begin to turn brown around the edges. Sprinkle with sea salt or garlic gold as soon as they are out of the oven and enjoy!

I am a big fan of Kale chips. I get more salty than sweet food cravings, so these really hit te spot for me.
