Hello, hello friends. Here’s that recent eats round up that I promised you in my last post. It’s full of tasty things that I’ve eaten over the last month for breakfast, brunch, lunch and dinner. I hope this post gives you some ideas and inspiration for upcoming meals.
The first day of summer was on June 21 and let me tell you this…I am looking forward to hitting up the farmers market on Saturday morning in hopes to score my first peaches and tomatoes of the season. Let us commence all of the delectable summer eats!
BREAKFAST + BRUNCH
B.L.T. breakfast bake with turkey bacon, sautéed spinach and cherry tomatoes. You can find the recipe in this Instagram post. Sliced avocado on top and toasted sourdough and apple slices on the side.
Sunday brunching on cottage cheese scrambled eggs, turkey bacon, avocado, fresh fruit and sourdough toast.
A plain bagel from Poppy’s toasted with cream cheese and butter. Mango on the side.
Yogurt bowl with FAGE 5% plain Greek yogurt, honey, my dad’s homemade granola that I brought back from Florida, cherries, blueberries, bananas, almond butter and a mix of flax seeds, hemp hearts and chia seeds from NOW Foods.
LUNCH
Hummus + veggie wrap with hummus, Cedar’s feta dip, carrots, cucumbers and spring mix tossed in olive oil, lemon juice and sea salt on a Ezekiel sprouted grain tortilla.
Base of arugula tossed in lemon juice, olive oil and sea salt (this does wonders for your greens to soften them up and add flavor – I do it a lot!) and steamed basmati rice. Toppings included shredded mozzarella, an air fried Dr. Praeger’s veggie burger, a hard boiled egg, hummus, avocado and Trader Joe’s cilantro dressing.

Chicken noodle soup with chicken salad and crackers. This was a meal on repeat when I was sick. The soup and chicken salad was from Phil’s Deli in Charlotte.
Same chicken salad but make it a melt with avocado, colby jack and sweet pickles.
Salad bowl with arugula tossed in lemon juice, olive oil and sea salt and topped with couscous, fresh mozzarella and cherry tomato salad, chopped deli turkey, avocado and fresh mint. I am loving including fresh mint and basil from my herb garden in my salads right now!
Pastrami melt with mayo, spicy mustard, Monterey Jack, avocado and sweet pickles.
It had been a hot second since I had pastrami and yum, yum! Here’s another sandwich with mayo, spicy mustard, avocado, Monterey Jack, and cherry tomatoes on untoasted sourdough.
DINNER
Seared and baked pork tenderloin that was marinated in Trader Joe’s Soyaki Sauce. Served with sautéed green cabbage and a baked sweet potato with brown sugar and butter.
Fish tacos with grilled cod, avocado, cabbage slaw and a simple aioli. Rice and corn on the side.
I did a big meal prep one night of air fried tofu and roasted mushrooms, carrots, asparagus, squash, zucchini and cherry tomatoes.
Here’s a big veggie bowl with everything above over quinoa and served with hummus and Cedar’s feta dip.
Pasta takeout from Portifino’s. Chicken piccata and pasta primavera.
Speaking of takeout…check out this chicken parmesan pizza from Sal’s Pizza Factory. Holy moly. This thing must have weighed five pounds. It’s a pizza topped with literal sliced chicken parm.
I had heard all the good things about Sal’s and decided to go for one of their more out there pizzas. It was a lot but very delish!
Rice bowl topped with sautéed ground beef, roasted brussel sprouts, Cedar’s feta dip and Mighty Sesame Sriracha Tahini.
I took the leftover ground beef and roasted brussels and turned it into a gnocchi bowl with Trader Joe’s gorgonzola gnocchi. Also mixed in a frozen mushroom medley from Trader Joe’s and topped it all off with their Sofrito seasoning and parmesan cheese.
Trader Joe’s peanut and crispy noodle salad kit with avocado and cherry tomatoes mixed in. Topped with their gluten-free chicken nuggets.
Last thing! You must try these steamed pork and ginger soup dumplings from Trader Joe’s. Ready in two minutes and SUPER DUPER yum! Ate these while I was sick and they hit the spot. Will for sure buy again.

These meals all look so amazing! I absolutely love those soup dumplings as well, they are so easy and delicious.
1) I am big into huge, seasonal salads right now with lots of veggies like cherry tomatoes, cucumber, avocado, radishes, sugar snap peas, sometimes fruits like peaches or berries, and rotisserie chicken. I credit your posts to introducing me to hearts of palm on my salads, as well as that wild brine beet kraut!
2) I had thinly sliced potato on pizza before which got nice and crispy and it was incredible.
