I’m back in action from Charlotte. We made our way back yesterday fueled by a Starbucks stop.
Soy Skinny Vanilla Latte with one pump of vanilla. I used to love skinny vanilla lattes but now even with only one pump, I find them WAY too sweet. Regardless, this gave me the caffeine boost I needed to stay awake while Brandon drove.
I also picked up a snack pack because my tummy was grumbling.
Annie’s Bunny Grahams, string cheese, apple slices and raisins. I ate everything but the raisins. It was a good mix of snacks for the car.
We came home and immediately began unpacking (if we hadn’t done that the bags would have sat for days untouched), put clean sheets on the bed (ahhhhh…) and I went to the grocery. We were both craving a homemade “normal” dinner.
Parmesan crusted chicken, couscous and sauteed peas and spinach with caramelized onions.
I slept for nine hours again last night. I’m on a roll!!! Work was very quiet today. It was nice to just catch up and get ready for the new year.
I came home for lunch and made a pita with pepper jack cheese, avocado, spinach and sprouts.
I was so ready to get back to my yoga studio after work today. I attended a hot vinyasa class and then stayed for part of long, slow, deep (deep stretch). Unfortunately, my hamstring was screaming “NO” to extended holds so I left early. I haven’t talked about this much on the blog but my left hamstring is still no where close to 100%. It’s extremely frustrating. I am able to easily make it through my normal classes with modifications but the deep stretch class tonight was just too much.
Brandon had his bowling league tonight so I was on my own for dinner. I was feeling rather uninspired and finally ended up keeping it simple and making an egg scramble.
One egg scrambled with a Morningstar vegetarian sausage patty, spinach and goat cheese. A cinnamon raisin english muffin and orange slices on the side.
I posted this on my Facebook fan page today but I wanted to mention it here too – please let me know if you guys have any topic requests for Peanut Butter Runner. I’m trying to do some planning for 2011. I would love to hear your suggestions and ideas.

I had a normal dinner tonight too. Ah it feels so good ๐
Apparently I’m still in holiday mode: my husband and I made a turkey this morning. ๐ They were given out at work and today we were finally able to cook it. We’re going to have some great sandwiches.
Oh no, I hope your hamstring recovers soon! ๐
On that note, a post on injuries might be good! Or one on yoga, and how it benefits running would be good too ๐
How frustrating that your hamstring is still bothering you. I’m sorry. I hate nagging injuries.
I think in 2011 you need to educate us more about how you got SO good at yoga. I know you’re a natural and work really hard, but I’m finding it so hard for me to improve. Thanks Jen ๐

I find that the sugarfree vanilla syrup is sooo much sweeter than the regular. I usually just got with that and take the extra calories– or skip the vanilla and add a little more sugar ๐
I’ve never enjoyed my normal, home-cooked meals as much as I have this week.
I am really looking forward to following your journey through the yoga teacher intensives. I have multiple brochures on teacher training and keep reviewing them. I am not ready for it at this point, but I think it will be so great to follow you on that path.

Something that I find super refreshing about you and your blog is that you actually have a job other than blogger/writer. Yet you manage to fit in all your workouts and cook! I don’t know if that is something worth blogging about (time management or whatever), but I thought I’d at least let you know that I like that about you.. I’m also looking forward to hearing about the growth in your yoga practice this year!
