Happy Monday and I hope that you had the nicest Easter Sunday that you could. It was definitely a different one, but not a bad one for us.
I was missing my family big time but I tried really hard yesterday to practice gratitude and focus my attention on abundance, blessings and future opportunities. Since we didn’t get to take an Easter picture this year, here’s a throwback to last! 🙂
I shared this quote on my PBR Facebook page yesterday morning. I’m sure I’ve shared it on my blog before. It’s one of my favorite passages of all time and perfect for these uncertain times.
I got Finn’s Easter basket ready for him. It was a combination of things I picked up at ALDI when I did my shopping last week along with things my mom and grandmother sent. Mema gave Finn the customized book, “Finn’s Snuggle Bunny” and it is the sweetest ever! The book is customized with his name in both the text and images. My mom sent these matching eggs and Finn has been playing with them nonstop since he opened them up!
Finn enjoyed digging into everything when he got home right around noon.
I made us both a brunchy lunch of scrambled eggs, sautéed spinach, fruit and sourdough toast. I had just baked the sourdough that morning.
While Finn was napping, I hung out with Virginia and Stella. Stella is an 11 pound cockapoo and I just can’t even with how cute and affectionate she is. It is hysterical to watch her run around with the big dogs. They were playing fetch on Saturday evening and Stella came back with the ball no fewer than 5 times!
Once Finn was up from his nap, I was determined to get everyone outside for a bit. We had on and off rain yesterday and it did end up drizzling for most of our walk but it wasn’t too bad at all and I’m glad that we went. All of us need to get some fresh air…mostly the dogs! We had crazy storms overnight last night with wind that woke me up and made me worry about the trees in our yard.
I cooked a very non-traditional Easter dinner for Virginia and myself of soy-ginger baked cod with steamed jasmine rice and sautéed zucchini and mushrooms. It was delicious but definitely missed the ham, potato salad and biscuit dinner that my dad cooked yesterday.
Virginia has actually been housesitting for her boss instead of staying here but still comes and hangs with us for a bit every day, which is keeping me sane and not crazy lonely!
My evening ended on the couch watching Andrea Bocelli’s “Music for Hope” on YouTube. It was so beautiful and comforting with rain coming down outside in the background that I watched it three times in a row.
One more throwback from last Easter. I have so much to be grateful for.

Happy Easter, Jen! Those eggs are such a flashback – I think I had those as a kid!
It sounds so hokey but I have just really been grateful for healthy breathing lately. The stories of the struggles of those who are ill have made me much more intentional about reminding myself to appreciate the sensation of being able to breathe deeply in a way I don’t think I was really doing before. On a more materialistic note, I am SO grateful my husband and I had an outdoor table and chairs delivered right before all this started and can enjoy fresh air and outdoor meals while staying at home.
And thank you for posting the grilled mushrooms and zucchini – I ordered zucchini from a restaurant now doing grocery delivery and they are the largest I’ve seen in my entire life ? I am trying to figure out multiple ways to prepare them so we won’t get too sick of them before our garden zucchini hopefully start producing!

Eating outside is one of my favorites. Having a nice patio set up is such a treat, especially in times like these.
Easter was very unusual for us this year (we had 6 inches of snow) but it kind of just made me laugh at the whole situation. I currently live alone in a state 7 hrs away from family. It was a very lonely Easter but I slept in, got in a peloton bike workout, ran to the caribou coffee drive-thru for an easter treat, grilled (on the griddle inside because of 6 inches of snow) pork chops from the local butcher (wanted to support local), and then just chilled before the start of another week. I am seriously considering starting my house purchase search just so that I can live in a bigger place if this thing is going to go on for much longer.
Do you have any short term goals or life changes that you might make if these stay at home orders hang on much past the beginning of May?
I know how hard holidays can be when you’re so far away from family. I’m sorry. And the snow! Ugh!
I do have both short-term goals and life changes in the works! Starting a new business, house hunting and more! 🙂
We ate chocolate and played Jaws, which is a really fun board game. Then my 11-year old still wanted an easter egg hunt which made me happy:)
