Happy weekend. Wait, it is the weekend right?
I feel like I’ve seen versions of this quote all over Instagram this week and it’s pretty accurate! This is such a weird week of the year where everyone seems off their normal routine and feeling out of sorts. I’m not sure if any of you are reading blogs this weekend but it’s been weeks since I’ve done a recent eats round up so I thought I’d pop in with one this Saturday morning.
I hope you guys are enjoying these last few days of 2017. I’m finally starting to feel a little better so I’m grateful for that.

BREAKFAST
Plain full-fat greek yogurt with honey, banana, granola, raspberries and Wild Friends almond cashew super butter. (Which is on sale 40% off on their site right now!)
Pumpkin banana oatmeal with cottage cheese stirred in. Topped with that same Wild Friends almond cashew super butter. Recipe for oatmeal is on Instagram and I just added a little pumpkin.
Sometimes my breakfast bowls look like this but they still taste good! 🙂 Here’s mashed sweet potatoes with nut butter and granola. At least we have Sullie here looking cute.
LUNCH
Salads have been few and far between. I think my sickness really turned me off of them for a while as you will see in the following photos. I ate this one the Monday before I got sick overnight. It’s kale and quinoa with apples, beets, avocado, hummus and some other stuff.
I think the two meals I’ve eaten most the last two weeks are soup and toast and eggs on toast.
Sourdough with mayo, avocado, scrambled eggs and provolone.
My friend Angie made me the most DELICIOUS chicken noodle soup I’ve ever had. I have to get the recipe from her to share with you guys. It’s seriously amazing.
More eggs and sourdough avocado toast.
One day I did mix it up and have a turkey wrap with avocado, apples and provolone.
DINNER
Slow cooker shredded salsa chicken over zoodles.
Salmon with a mustard brown sugar glaze and roasted carrots, parsnips and fennel. I ate these two meals before I got sick.
And then started the egg toast.
And the soup. I made a big pot of Oh She Glows Glowing Spiced Lentil Soup and it’s really good and super simple to make.
Finally decided that salads should make a comeback. This was after two days where I ate egg toast, leftover spaghetti, oatmeal and more egg toast. I needed a vegetable in my life. Haha.
Christmas dinner leftovers. The stuffed pork roast was just as tasty the second time.
Postmates from one of our favorite fast and cheap spots, La Shish Kabob. We got the mixed kabob plate and the veggie pate.
The following night I made a big rice bowl from the leftovers.
ETC.
There has been a LOT of ETC. lately!
One of our friends baked us a vanilla lavender poundcake that I enjoyed many slices of before wrapping individual slices and freezing them to pull out for a treat later.
I think chocolate covered pretzels are one of the best combos ever. Mmmmmm…….
I left this out of the pregnancy cravings in my 21 week pregnancy update but someone needs to get my hand out of these bags of salt and vinegar chips.
Holiday dinner out with girlfriends at Stagioni and we split this plate of “pillows from heaven” said the dessert menu. That they were. Fried dough with powdered sugar and salted caramel sauce? Yes please. They melted in your mouth.
And finally, I have been baking a ton of sourdough. I’ve given away a lot as gifts and clearly I’ve been eating a lot of it too! Last Thursday I baked what I think was my best batch ever. The crust was crunchy but not too chewy and the bread was so soft and tender. Of course I texted a picture to my dad and he asked what I did differently. I told him I thought it was probably due to having my starter out on the counter for two weeks and feeding it daily versus pulling it out of the fridge and feeding it a couple times before baking. Who knows?

IN CONCLUSION
Whew, I feel like this recent eats post needs some sort of final wrap up. Clearly, I have been a little off my game when it comes to what “normal eating” looks like for me. I contribute this to a blend of holidays + pregnancy + being sick. I’m not stressed about it and I’m actually naturally feeling a push back to better choices and a bit more balance. I am a firm believer that it all works out in the end so I’m not beating myself up over what I’ve been eating for the last two weeks.
I hope that if you are also feeling a little off track that you are able to have grace with yourself and just start anew when you’re ready.
