I hope that it is a beautiful Sunday wherever you are. It is really chilly here but the sun is shining and the cold air is invigorating. It also motivated quite a few yogis to show up for my 9:15 hot class so I’ll take that! 😉
I needed a little break from blogging this weekend so I have tons to catch you up on. Before I dive into all of that I just want to give you a little teaser. Make sure to check in on Monday because I will be finally announcing something that’s been in the works for weeks! It’s a really exciting new opportunity for me.
And here’s a look at the past few days of eats.
FRIDAY
Post-yoga breakfast of avocado, Morningstar “sausage,” egg and cheddar cheese on Great Harvest Whole Grain Goodness. I have been all about eggs lately for some reason. I have always enjoyed them but I have been craving them and eating eggs a lot more frequently the past few weeks. Weird. I think it may have to do with protein needs. Not sure.
Lunch after teaching yoga and training a client was a salad featuring fridge leftovers. This was one of the best salads that I’ve made in a long time. Spinach, mixed greens, roasted sweet potatoes, roasted brussels sprouts, roasted chickpeas, goat cheese, dried cranberries, pecans and honey dijon balsamic vinaigrette.
This about sums up Friday night dinner. I met up with Katie, Jessie and Rachael for a wine tasting at Zebra. Along with the wine I consumed several plates of cheese. This of course resulted in a late night hummus and chip eating session.
SATURDAY
I had to fill-in to teach the 9:30 power yoga class at the Y. I didn’t photograph my breakfast but it was leftover steel cut oats. It was so nice that the batch I cooked made two servings. They reheated well with a splash more milk to thin them out a bit.
Class went really well and then my day went a slightly downhill. I was on the way to a meeting and got pulled over. I immediately knew why…my registration is expired and has been for longer than I’d like to admit. I don’t know why I put off things like this. I feel so on top of  other things in my life but give no attention to things like getting my registration renewed. This is a huge growth area for me. I really need to become more responsible about this kind of thing rather than just pretending it doesn’t exist.
It was so cold and windy in Charlotte on Saturday so when I got home from my meeting I couldn’t resist crawling back under the covers and napping. I slept for about an hour and a half and woke up feeling like a new person. I made a veggie burger for lunch with avocado, spinach and goat gouda.
I usually try and make Saturday my off day from teaching and work. Since I did sub at the Y yesterday, I wasn’t able to get my own Saturday morning practice in. I decided to take the 4 p.m. 90-minute hot class at Charlotte Yoga. I knew it would be pretty slow flow and chill so I went into it with the mindset of just finding some relaxation. I was definitely able to achieve that – I slept for the last 10 minutes of class. It was blissful.
I went to Fran’s Filling Station for dinner. I have had lunch at Fran’s a few times but this was my first dinner. Overall, the food was great but the service was really slow and the kitchen was out of quite a few things. We started with a white bean and caramelized onion confit that was served with grilled bread.
And for my entree I had the latin wedge salad with grilled shrimp. A few of us ordered the wedge salad and it sparked a discussion on how infrequently we eat iceberg lettuce these days. It’s all about the mixed greens now. Iceberg aside, my salad was delicious and topped with cheddar cheese, roasted red peppers, grilled onions, grilled corn and served with a generous portion of avocado.
SUNDAY
I got up early this morning to work on my playlist for my morning hot class. I was annoyed to discover that my iTunes wasn’t functioning correctly and I was unable to purchase any new music. I really wanted to add some Whitney Houston remixes to my playlist. So sad to hear the news about her death. Whitney was definitely one of the artists that I played on repeat when I was growing up.
Breakfast while playlisting was a piece of pumpkin banana bread from the freezer and coffee. I topped one half of the bread with apple butter and sunflower butter and the other half with Justin’s Maple Almond Butter.
I went out for brunch after class with a few friends. More eggs! I ordered an omelet with one egg, two egg whites, spinach, provolone, sun dried tomatoes and roasted red peppers. A lovely bowl of fresh fruit on the side.
And now I am off to take yoga and teach a private. Check back in with me tomorrow! 😀

I love eggs and eat them at least once a day! They are so versatile, budget friendly, and loaded with nutrients. I’m not a fan of using egg whites, I like to use the whole darn thing. As always your eats look delicious, and cannot wait to hear the announcement. Enjoy the rest of your Sunday!
i usually use the whole thing too but the omelet at the restaurant had three eggs and that was just a little too much for me! hope you had a good weekend!

Hi! I’ve been reading for a few months but just now felt the need to comment. First, I have been all about the eggs lately! Just recently branched out beyond just eating them with cheese only, and adding some veggies.. Yum! Also… my inspection was due on my car the end of January & it was such a huge achievement for me that i got maintenance & inspection, etc the week before the end of the month. I have noticed that I just totally ignore things like that (paying bills, maintenance on my car, due dates, etc etc) because i just don’t want to deal with it… but then end up panicking, rushing at the last minute to do things & wasting more time/ energy dealing with it… (kind of like getting pulled over, right? lol 😉 I’m married with a job & two kids and I thought I’d be a responsible adult by now!?! I guess I just wanted to say I’m working on it to!

eggs + veggies is such a good combo (with cheese too!). i am determined to take care of my car stuff this week and to improve my patience on dealing with the “administrative life stuff.”

Quick question – I made the tortilla soup tonight that you had on here a few days ago and I think it’s good but could use more flavor. Any tips on what I could add or what I might have done wrong that hurt the flavor? Yours looks better than mine :(. Thanks!!!!
hmmm…i think a lot of my flavor comes from the toppings. i stir in sour cream, hot sauce, fresh lime juice, cilantro, cheese and avocado. also always make sure that you salt the recipe enough and you can add more chili powder or cayenne pepper for some extra spice.

I am also pretty curious about Monday. I am all about eggs at the moment too. I love that you requested 2 egg whites plus one egg when eating out. I always do that at home, but have yet to order it at a restaurant, I didn’t know they would do it. I will have to push my luck and ask.

it was a three egg omelet and i knew that i couldn’t do three whole eggs. at home i usually do two so i thought one egg + 2 whites would be perfect…and it was! ask next time!
I’m an egg addict. My poor husband is probably sick of breakfast-for-dinner each week but it’s something I cannot stop doing because I enjoy eggs so much. I especially love avocado with my eggs — the creamy texture is phenomenal!
haha! breakfast for dinner is so easy.
avocado, egg and cheese is one of my all-time favorite combinations! especially good in a quesadilla or breakfast burrito with some black beans!

I love eggs! It’s unfortunate that David doesn’t like them. Well, maybe not because it means more for me! But it’s a signal of growth for him that he can now sit on the same couch as me when I eat them. He used to not be able to be in a room where there were eggs, whether scrambled or fried.

I used to hate eggs. Like ALL my life until I was pregnant with my second son. Then I ate poached eggs every chance I got. Now I love an egg cooked in sesame oil and soy sauce on top of brown rice and kale sauteed in garlic topped with black sesame seeds and crumbled nori or kale flakes. Bizarre I know but it’s SO good.
I just read that eggs are high in choline and fight inflammation. I recently upped my hot power yoga classes from 4 times a week to 5 and maybe it has something to do with that?
Sorry about getting pulled over. I am a disaster when it comes to car maintenance. Growth is everywhere!!
So weird, I have been unusually into eggs as well! Last week I made kale chips and paired them with fried eggs, and yesterday I made breakfast burritos for the first time ever. Those were something I thought I would never enjoy but with just eggs, diced cherry tomatoes, avocado, and a spicy yogurt dressing they were so so good!
