Where am I? What day is it? The last 48 hours have been insane. Since you last heard from me I have taught six yoga classes (at three different locations!), taught BodyPump, trained two clients and had a couple of appointments and meetings. Craziness but I completely love it.
I didn’t get a chance to post yesterday but I must tell you that I have read every single one of your comments on the giveaway post about the GOOD/GREAT/HAPPY things in your lives and oh my god…they have filled me with inspiration, hope and love. Some of your comments even brought tears to my eyes. I highly recommend bookmarking this post for the next time you find yourself in a funk or having a bad day. I guarantee your spirits will be lifted after reading through the comments.
The downside of being so busy is that I have neglected to take many photos. I do have two delicious breakfasts to share with you.
I had a quick break yesterday that allowed me to come home to eat and check on Sullie. I created an amazing new scrambled egg quesadilla combination for brunch – apricot preserves, brie, spinach and a scrambled egg. Browned in a skillet with butter. So good. I could eat this every day.
The rest of my meals yesterday were consumed on the go. A Cliff Bar after getting some cardio and a shower in after teaching at Charlotte Athletic Club and then a veggie burger, salad and some fries at Lebowski’s (<– best bar food in Charlotte!) after teaching BodyPump.
Breakfast this morning was plain Greek yogurt with bananas, strawberries, granola, dried cranberries and Justin’s Maple Almond Butter.
Are there any breakfasts you’ve been loving lately?
Lunch today was unpictured but I had a tuna melt with cheddar cheese on sourdough and then some coffee and bites of a giant, still warm cinnamon roll at Sunflour Bakery. My new favorite spot in Charlotte.
Okay, go time. I have an appointment at 4 and then I’m teaching again at 7:15. I am planning on squeezing in my own practice between the two and taking a hot class at Charlotte Yoga. I haven’t practiced since Friday and my body needs it. I’m getting a massage tomorrow…which will be oh so painful but it’s so necessary. I feel like one giant knot of tightness right now and can’t wait to have someone dig into it!
Remember, you have until midnight today (Wednesday) to enter the Ghandi Inspired Giveaway!
Have a wonderful day!
Eggs quesadilla … Great meal !
My favorite breakfast lately is oatmeal made with strawberry flavored soymilk, coconut and sliced banana (this combo is just perfect when it’s warm )
oh yum! i haven’t tried strawberry flavored soy milk but that combo sounds so good.
Lebowski’s definitely is the best bar food in Charlotte! Living in Dilworth, I used to run and drive past it every day, but never stopped in until I read about it on your blog a few months ago. LOVE. Their tomato bisque is delicious!
so glad i could introduce you to the deliciousness of lebowski’s. garlic fries? so amazing.
You just reminded me that I think it’s time I had a massage as well! I’m going to book one right now with a client, who I’ll be bartering with when the temperatures get warmer. This week has been nutty for me as well, between lots of clients and possibly fighting something icky. I’m hoping to squeeze in a hot vinyasa class this evening with a client. Have a wonderful Hump Day!
that is so nice that you can barter services for a message. love it! i hope that you are feeling better.
Jen- where are your white dishes from? I love them!
they are vietri – i wouldn’t recommend them though. they are supposed to be dishwasher/oven safe and good for everyday use but they chip SO easily. drives me crazy.
That quesadilla looks fabulous! I have to do the scrambled egg in bread more often. 😛
Lately, instead of making oatmeal in the microwave, I’ve been making them on the stovetop. I mix it with banana, cranberries and chia seeds, then top it with crunchy peanut butter and granola. It keeps me full for so long!
i agree, stovetop oatmeal is the best. so much better than microwaving. the texture is totally different!
So busy! I still haven’t made it to Lebowski’s, which is a shame since the hubs loves that movie.
try it! they have trivia on tuesday nights super fun. it’s a cozy little place.
Mmm I am totally recreating that quesadilla for dinner!
I really need to get some variety in my breakfasts. I have a green monster every single morning, made exactly the same way. I think it’s time to branch out…
i haven’t had a green monster in forever. i don’t crave them as much during the cooler months. i repeated breakfasts a lot when i was working 9-5. easier that way!
I just had a deep tissue massage on Saturday and I’m already in need of another one, so I feel ya!
i know! really trying to figure out how to fit regular massages into the budget! 🙂
I’ve only had two massages in my life and they weren’t even deep tissue but they hurt like heck! I don’t know if it’s because I have a small frame or I’m just a wimp. How did you find a massage therapist that worked for you? I like the idea of massages and think they could be a great source of relaxation but have kind of been scared off because of my experiences.
michelle – i went for a neuromuscular massage today and it was intense. the best massage i’ve ever had but definitely “therapy” as opposed to relaxation. i was referred to this therapist by one of my personal training clients. i haven’t been a huge fan of massages in the past but i’m starting to appreciate them now for physical benefits since i work my body so hard. i totally think the experience depends on the therapist. definitely recommend word of mouth and avoiding the “chain” places.
My breakfast of choice for the last month or so has been what I call “eggtoast.” One word. 😉
It’s pretty similar to your open-faced sandwiches but really plain.
I’m usually in a decent sort of a hurry in the morning, so I microwave an egg one of my small round Corningware pieces, slice a little cheddar and put them both on a piece of wheat toast.
Best, quickest, most-fillingest, easiest breakfast ever! 🙂
i think that sounds great! i need to get better about eating eggs for breakfast. for some reason i crave carby things! 😉
You are tagged in my “meme” today 🙂
thanks girl!
I enjoyed reading everyone’s good/great things in your comments. It’s awesome to focus on the POSITIVE in life as we all know there are many negatives out there. I thought it was refreshing for everyone to be sharing things that are going well — and the hope that was shining through everyone’s words. Yet another reason PBRunner is the first blog I hope to find new posts on 🙂
i know! it is truly inspiring to read all of the good things that are happening in people’s lives. it is easy to get wrapped up in the bad but really…every day is a blessing and we are all so lucky. thank you so much for reading.
I just want to thank you for posting so often and for being such a powerful force of positive energy and light. I read your blog every day – it’s my favorite one. This year was such a big one for me in terms of healing my relationship with food and you were such a huge part of that and such a mentor. Tomorrow is my birthday and I know that this year, food has been nourishment and joy rather than pain and suffering. I still have a long way to go, but I just wanted to thank you for how much you have helped just by being yourself.
I am in a yoga teacher training too and it’s ending soon, and I’ll miss it terribly. However, I am also starting to teach (in my living room right now) and I am so inspired to go out into the world with this. I am also a wee bit terrified but I am so inspired every time I come here. Thank you! xoxo
pamela – thank you so much for your comment. it made my night when it read it yesterday and it was a meaningful reminder of why i do what i do…and was a reminder that i really needed at the moment.
i am so happy to hear that the past year has been transformational for you in regards to food and i love your attitude towards food as you move into a new year of your life. congratulations on your yoga journey. teacher training is an amazing experience and i am grateful every day for my practice and that i found yoga.
i hope that you have a very happy birthday and that this year is filled with healing and love. thank you so much for reading my blog!
