It’s Saturday afternoon and I’m sitting here eating a tomato, avocado and bacon sandwich with lots of mayo and fresh basil. I’ve really appreciated having fresh summer produce around after last weekend’s farmers market trip.
Since Finn is napping, I thought it’d be a good time to pop in and share what I ate last week. I have to be creative with my work hours these days so sometimes blogging happens at 10 p.m. or on the weekends. 🙂
BREAKFAST
Smoothies.

A couple of mornings I also had greek yogurt with granola and berries. One morning I had a morning glory muffin from Sunflour.
LUNCH
Cue all of the tomato sandwiches and fresh peaches.
It’s the most wonderful time of the year! (Insert heart eyes emoji!)
One day I added deli meat and cheese but truly, this sandwich doesn’t need it.
On Thursday I met a friend for lunch at Bulla Gastrobar (pronounced Boo-Ya…isn’t that funny?). It’s recently opened Spanish-inspired restaurant in the SouthPark area. There are multiple locations across the US.
I had a salad with spinach, arugula, beets, candied nuts, salmon and Spanish goat cheese.
The interior was very clean and inviting. The menu looked interesting and I would go back to try some of the more Spanish-themed dishes. I went with a salad on this visit because I don’t love warm and/or heavy meals at lunch, especially in the middle of the summer when it’s so hot out.
DINNER
I pretty much stuck with my meal plan for the week. It was helpful to have one mapped out because it kept me accountable to actually cook food since I knew I had it on hand. This was roasted salmon, cauliflower and sweet potatoes.
On two different nights I made the most delicious combination of steamed basmati rice with a fried egg, a Dr. Praeger’s Veggie Burger, leftover roasted cauliflower and Hope Foods Kale Pesto Hummus.
This is one of those meals that my dad is probably shaking his head at but I swear, it totally worked and tasted so good.
Dinner two other nights was this one-pan roasted dinner of spinach chicken sausage, sweet potatoes and okra.
Again, I put some of the kale pesto hummus on there because I could eat that stuff with a spoon. It’s delicious and so flavorful.

I saved some of the cookies I baked on Wednesday and have been making my way through the stash. Doesn’t get any better than homemade chocolate chip cookies. For those of you asking about the recipe, I used the one on the back of the Ghirardelli chocolate chips but increased the salt to one teaspoon because YUM to being able to taste a slight saltiness with CCCs.

100% yums up on the rice/egg/veggie burger bowl…you had me at the egg. It’s peak garden season now and I’ve been loving the tomatoes and in BLT heaven. If the stars align next weekend I’ll have a garden fresh tomato & pesto pizza.
The “ll” in the Spanish language is a “ya” sound hence the pronunciation of Bulla. I was a Spanish major in college so any opportunity to engage…I take it! 🙂
I have always made the toll house nestle choc chip cookies. I love the dark choc bits now and the weather is getting cooler…do I dare say. Lol. So I’ll have to buy 2 bags, 1 to eat and one to bake with. My fav to munch on is dk choc bits, walnuts, and pretzels…few of each. I’m not a fan of tomatoes, but I love cucumber sandwiches. I have never tried okra, so I don’t know what it tastes like. Finn and you have a great day!

Those bowls are so much my lunch on any given day; a little rice or sweet potato, a veggie burger or tuna, veggies and maybe a sauce. Lunch!

The rice/egg/veggie burger bowl…yum or yuck? Yum! It reminds me of one of my favorite restaurants in Minneapolis called Agra Culture. They have various bowls that they throw a bunch of healthy ingredients in and it always turns out to be phenomenal.
