I am thoroughly entertained right now. I’m watching American Idol for the first time in years and it’s awesome. Steven Tyler and Jennifer Lopez are complete pushovers (um, and Steven Tyler loves the ladies)! Did anyone else catch the Michael Jackson impersonators attempt at Miley’s “Party in the USA?” Priceless.
Moving on. Wow, where do I even go from there? Okay, I slept in this morning (no AM workout) until 7:30 and then tackled an insanely crazy day at work. I actually love to be super busy – days fly by when I have to strategize how to get everything accomplished in the most efficient manner. I broke for lunch with Brandon around noon.
Leftover Brixx pizza, orange slices and baby spinach with carrots, goat cheese, dried cranberries, almonds and a drizzle of balsamic and olive oil. I also had a Cashew Cookie Larabar at my desk this afternoon as a snack and two mugs of green tea.
I left work around 6 p.m. and was torn between a run, yoga or rest. I ended up opting to catch up on Grey’s Anatomy and cook a delicious dinner. I just wasn’t feeling the workout today…at all. Sure, I could have pushed myself and I know I wouldn’t have regretted a run but rest was just what my body was craving.
I made an old favorite for dinner tonight – Brie and Apricot Chicken with Almonds. We didn’t have apricot preserves so I made do with what we had in our fridge.
I used hot pepper peach jam instead and it was equally as delicious as the apricot…if not better!
The recipe link is above but basically all you do is pound out chicken breasts, dredge in flour, brown in a skillet and then top with jam, brie and almonds and bake in the oven.
Just as good as I remembered! I mean come on, clearly I love anything topped with melty cheese! ๐ Roasted broccoli and potatoes on the side.

Somehow I lost the ability to sleep in! When I was in high school and college I could easily sleep until noon, no problem. Now, 9 a.m. is suuuppper late for me!

Oh UM! That looks awesome! And so easy. I’ll have to remember this one. I have some really awesome strawberry jalapeno jam…I wonder if that would be good or if the strawberry would be too weird with chicken? hmmmm. Anyway, I adore brie so I’m sure this is absolutely delish!

Hi Mary Beth – I looked at the jar and it doesn’t seem like they have a website. My mother-in-law gave it to me one day randomly. She picked it up in the NC mountains. There is a phone number if you want that – just let me know!
