I’m teaching BodyPump tonight (I couldn’t find a sub) and then we’re going out on the town to celebrate. So excited!
But first, let’s back it up…
Monday lunch.
A nice medley from the fridge. Orzo Salad (just blogged about it on Bakin’ and Eggs), cheese and crackers, CHERRIES!!!, an oatmeal raisin cookie and half a bottle of Honest Sublime Mate tea. Enjoyed al fresco with an issue of Runner’s World.
Since I didn’t get to practice last weekend (and I wanted to test drive my new yoga mat), I headed over to Y2 after work for a Power Mixed class with Christine. Even though it wasn’t a hot class I was still dripping with sweat. Class was fun and I got to work on flying crow so I was happy!
Dinner last night was Pad Thai with Shrimp and Tofu.
Frozen Asian medley veggies on the side.
I told Brandon last night that I was going to make him waffles for his birthday breakfast. I had my alarm set for 6:45 a.m. but woke up at 5:45. I think all the early yoga and BodyPump mornings are making me an early bird! This early wake up provided too much time for me to think about the waffles and how I could make them healthier.
We ended up with this.
Whole grain protein waffles. Not for the faint of wheat heart. Brandon took one bite and was pretty disappointed that I didn’t just stick with traditional waffles. I ended up making him two eggs to replace his waffle. Oops. Birthday fail. ๐ณ
I loaded mine up with almond butter, plain Greek yogurt and maple syrup and went to town. I don’t think I’d make this particular recipe again but it was okay. On the side I had a Morningstar sausage, peaches and cherries.
Lunch today was another fridge medley.
Baby greens topped with artichokes, tofu and roasted red pepper hummus, cherries and orzo salad. I also had an oatmeal raisin cookie and the rest of yesterday’s tea.
I made Brandon a jalapeno chicken quesadilla so hopefully that made up for some of my breakfast fail. ๐

Can’t wait to try out the orzo salad! I’m adding it to my (overdue) grocery trip for tonight. How did you make the pad thai? I’ve been browsing low-fat recipes online but nothing looks as appealing as yours!
