It’s time for another round up of my recent eats. This one is light on breakfast, heavy on lunch and includes a nice mix of dinners. It ends with cake which is never a bad thing in my book.
BREAKFAST
Plain greek yogurt, honey, bananas, strawberries, blueberries, dried cranberries, Trader Joe’s Peanut Butter Protein Granola and lots of peanut butter. 🙂
Avocado toast on homemade sourdough, cottage cheese scrambled eggs with sauerkraut and orange slices.
LUNCH
Greens mix with avocado, chickpeas, strawberries, feta, dried cranberries, pistachios and a bottled white balsamic dressing from Whole Foods.
Deli sandwich with turkey, provolone, lettuce, tomato and mayo on sourdough with a side of Ruffles. This was a pre-hike picnic lunch!
Turkey, avocado and cheese roll ups with grapes and pickles.
Sourdough toast with fig jam and white cheddar cheese, cashew carrot ginger soup from Pacific Foods and grapes.
Spring mix, turkey, avocado, cashews, cheddar cheese, grapes and dried cranberries with a mix of balsamic and a basic oil and vinegar dressing.
Turkey, muenster, sweet pickles and mayo on honey wheat with a cup of the soup you see above.
DINNER
Air fryer salmon with roasted balsamic brussels sprouts and steamed basmati rice. I took a shortcut on the brussels by steaming them in the bag for about two minutes before roasting them. I drizzled the salmon with olive oil and seasoned it with sea salt and a mix of Dizzy Pig Rubs. I cooked it in my Ninja Foodi Oven on the air fryer setting at 400 for about 13-14 minutes…until the temperature was 125.
Homemade turkey meatballs over leftover rice with leftover brussels sprouts, feta and a scoop of hummus.
Salad with chopped romaine, Trader Joe’s gluten-free chicken nuggets, toasted pecans, hearts of palm, carrots, tomatoes and shredded cheese with an organic creamy Italian dressing from ALDI.
Takeout sushi. Every now and then I get a craving for a basic Philly roll!
Whole Foods frozen barbecue chicken pizza with a side salad.
ETC
The most gigantic and delicious slice of Italian Cream Cake from Villani’s. I ate about two-thirds of it the night that I got it and the rest for breakfast the next morning. It made for excellent running fuel! 😉 I took Finn for an outing to the bakery after his swim lesson last week. He picked out a ricotta cookie with pink frosting and “mmmm’d” his way through it.
I am enjoying a quiet and productive day at home while Finn is with his dad. I recently gave up a couple of my weekly yoga classes to focus on another project and to make space for more personal time. While it’s been a bit of an adjustment, it’s been a positive change overall. I met a girlfriend for a run this morning and am about to head out for my bi-weekly visit to Dr. Bradberry to have my hip worked on. Tonight I plan on making myself a delicious dinner of homemade cabbage rolls. I’ve been craving them for a long time and they seem like the perfect thing to make on a rainy October evening.

I’ve been air frying kabocha squash cubes until they’re nice & crispy. They make great salad croutons!
I did an internship in Charlotte last summer & Villani’s quickly became one of my favorite places in the area. Their cake is the BEST! 🙂
