Description
Delicious, hearty and buttery apple cinnamon muffins with a crumb topping and vanilla glaze.
Ingredients
CRUMB TOPPING
⅓ cup light brown sugar
1 teaspoon cinnamon
¼ cup Truly Grass Fed unsalted butter, melted
⅔ cups all-purpose flour
Pinch of salt
MUFFINS
½ cup unsalted butter, softened
⅓ cup packed light brown sugar
¼ cup granulated white sugar
2 large eggs
½ cup plain greek yogurt
2 teaspoons vanilla extract
1 ¼ cup all-purpose flour
½ cup whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
½ teaspoon salt
¼ cup milk
1 ½ cups peeled, chopped apples (2 small)
GLAZE
1 cup powdered sugar
3 tablespoons heavy whipping cream (or half and half, or milk)
½ tsp vanilla extract
Instructions
- Mix topping ingredients together until they reach a crumbly texture. Set aside.
- Preheat oven to 425. Prepare a 12-count muffin pan with nonstick spray or liners.
- Using a mixer fitted with paddle attachment, beat butter and sugars together until smooth and creamy. Add eggs, yogurt and vanilla and beat at medium to high speed until fully incorporated.
- Whisk flour, baking soda, baking powder, cinnamon and salt together and pour the dry ingredients into the wet ingredients. Add the milk and apple and mix on low speed until combined.
- Spoon batter into each muffin cup, filling all the way to the top. Press the crumb topping into the top of each.
- Bake for 5 minutes at 425 and then lower oven temperature to 350 and bake for another 15-20 minutes longer.
- To make the icing, whisk all ingredients together and drizzle over warm muffins.
