Thursdays are pretty much the opposite of Tuesdays for me. I actually kind of consider it a day “off” because as of now only have a couple of commitments on Thursdays. Did you know that it’s actually one of the slowest days of the week in the fitness world? I think that people start out the week with a lot of resolve and then kind of lose it as work becomes crazy and happy hour or vegging on the couch become more appealing than the gym.
For those of you who were asking about my early morning pre-workout eats (or lack there of)…I actually did eat half of a banana with peanut butter before yoga this morning. Thursday mornings are my favorite because I get to practice ashtanga at Y2. My practice felt so good this morning. Ashtanga is a huge check in for me on how my body is feeling and today it felt amazing.
After practice I grabbed coffee at Starbucks and then headed over to Fight Gone Mad to check out their new facilities. Really fun news for my Charlotte readers…Y2 Yoga is partnering with Fight Gone Mad to offer bootcamps in November!
We’re going to be using their facilities to host our FIRST EVER off-site (out of the studio) fitness bootcamps that will be 90 minute workouts combining strength training, functional training, cardio, yoga and whatever else we want to throw in! 😉

The daily eats…
Lunch when I got home was a big quinoa bowl. I cooked quinoa with vegetable broth and sundried tomatoes and then placed it over a bed of spinach and topped it with kalamata olives, feta, avocado, plain greek yogurt and hummus.
Late afternoon snack before teaching a yoga basics class was a cinnamon raisin English muffin with peanut butter, honey, banana and cinnamon and a cup of hot tea. I needed a big snack because dinner was going to be late.
Dinner was sooo good and worth the 9:15 p.m. meal time. I didn’t get home from teaching until 7:30 and Brandon didn’t get home until 9 so dinner was late! Yes, that would be meatloaf that you see above but trust me, it’s delicious. Ground chicken as the base and stuffed with spinach and mozzarella. Topped with marinara and more cheese. I will be posting the recipe shortly. I discovered this recipe many years ago but I only make it once a year or so.

So ive been wondering for awhile how you store your avocado. Im sure you don’t have a whole one with your sandwiches and quinoa bowls but what do you do with the rest? How do you keep it from turning brown?
I usually only use 1/4 of an avocado at a time. We put them in the fridge in a plastic bag in the vegetable drawer. We leave the pit in tact and then just slice off the brown stuff before using it again. it does get a little brown but not too bad!
That’s interesting that you mentioned Thursday is one of the slower fitness days. I just moved to Newfoundland and joined the local gym yesterday. I wanted my Body Pump back!! During the tour I asked if any of the classes were really busy. Apparently Thursday nights at 6:30 is by far the busiest of the week! That really surprised me- and even more now that you mentioned it’s a slow day.
I haven’t taken class here yet but I’m excited to see what foreign body pump is like! 🙂
that is crazy! everywhere i have ever taught, classes have been less full on thursday than say monday or tuesday. interesting that it’s their biggest bodypump class of the week!

Jen, I, like Matt, want the meatloaf recipe. Also, when you practice ashtanga do you have a set flow, follow a DVD, are you in a class, or do you just see how your body feels and what it needs and move into positions from there? I’ve been following a few DVD’s and some sequences from yoga download but I’m bored. Just wanting some ideas.
I agree on Thursdays! I usually rest on Friday so by Thursday night I’m ready for my rest day. I tend to enjoy yoga the most on Thursday nights for that same reason… eases me into resting time 🙂

I always wondered if you ate a snack before a workout-sometimes I can power through, but other days I feel as though I will eat my arm if I have to! LOL
jess – it just depends on how early my workout is and how i’m feeling. i don’t love to practice yoga with a full breakfast so i’ll usually have a light snack if i’m hungry! i eat a big breakfast after!
You are all kinds of bad ass!!! I work out early mornings, and by Friday morning, I am dragging some serious tail!!
