Once a week I try to write a “recent eats” post with highlights of what I’ve been cooking and eating over the last week. Yesterday morning I was reading Tina’s “Monday In Meals” post where she recaps everything she ate in a day and I thought that would be an interesting take on this week’s recent eats post. I documented everything I ate yesterday (including snacks) for a holistic picture of what I eat in a day and I’m going to share a few other things I’ve been cooking up lately too!
Tuesday in Meals
I made smoothie bowls for me and my fiance for breakfast after teaching 6 a.m. yoga. Into the blender went frozen bananas, cherries, strawberries and raspberries along with frozen spinach, baby kale, peanut butter, coconut milk (from a can), a pinch of sea salt and a scoop of Premier Protein Chocolate Milkshake Whey.
Un-pictured: a couple extra handfuls of granola + a dip of the spoon into the peanut butter jar. Also, black coffee. Lots of coffee.
A handful of cherries around 11:45 a.m. while I was boiling eggs to have on hand.
Chips and hummus while I was making lunch. I almost always snack on something while I’m prepping my lunch. I feel like it takes me 15 minutes to put a salad together and I’m always starving!
Lunch salad eaten at my desk while I was on a webinar around 1 p.m. Baby kale, arugula, hardboiled egg, apples, dried cranberries, avocado, tomatoes, cucumber and pistachios with my Tahini Turmeric Dressing.
I ate the rest of the apple from my salad with cinnamon and cashew butter around 4:30 p.m.
And a date. I love these organic medjool dates from Natural Delights. They are so soft and chewy.
It’s rare that I get us fed before 9 p.m. so we usually snack while I’m cooking. Last night it was Glutino Sea Salt Crackers (<– our fave and you can get them for just $2.77/box if you buy in bulk from Amazon. I pay $3.49 at Whole Foods) with Roots Thai Coconut Curry Hummus. If you can get Roots Hummus in your area, you MUST try this flavor. It’s amazing. I also had a glass of wine.
I did a one-pan roasted dinner along with leftover braised red cabbage.
All plated up! I used a new-to-me Asian-Style Pork Sausage with Ginger and Scallions from Fork in the Road that I got at Whole Foods and also roasted mushrooms, carrots and cauliflower alongside it.
And then I stuck my hand in the chocolate and peanut butter chip bags a few times. 😉
So there’s a day of eats from start to finish for me. Note, I didn’t workout yesterday. It was a rest day.

Last week I made this awesome stuffed spaghetti squash with Italian sausage and veggies. I can’t wait to share the recipe with you!
Another lunch salad with massaged kale, strawberries, tomatoes, dried cranberries, avocado, turkey and pistachios with fig balsamic drizzle and olive oil.
Coffee, scrambled eggs and sweet potatoes with cashew butter.
When I was grocery shopping on Monday I finally downloaded the Whole Foods app and it’s awesome! There are special coupons that are exclusive to the app and one was for $5 off the most gorgeous halibut. Halibut is a pretty pricy fish so it doesn’t make its way home with me often but with the coupon it was doable. I made a red coconut curry with veggies and served it over jasmine rice. The fish cooked in the curry broth and was flaky and perfectly cooked. We loved this so much and I also plan on sharing this recipe with you. It was so flavorful.
And finally a leftover mashup night of stuffed spaghetti squash and red cabbage. And a look at how beautiful my blog pictures could be if I could actually photograph the food I make for dinner in natural light all the time. 🙂
I’m off to make a playlist for my yoga class tonight and then I have a meeting. It’s looking like today is going to end up being another rest day for me because I’ve had so many meetings, clients, classes and conference calls.

Do you snack while making meals? I do it alllll the time…breakfast, lunch and dinner.
I’m pretty sure I’m the earliest dinner eater! I eat at 4pm! But I wake-up at 4am…so it all evens out 😛

I still haven’t tried sweet potato with nut butter and every time I see your posts, it makes me want it! I usually east dinner around 6:30-7pm. I don’t usually snack on food when I cook any meal unless I need to taste test 😉

My boyfriend and I have completely opposite schedules so we actually eat separately. I’m up at 4:45am so I’m in bed by 9 so I eat dinner at 5pm. I guess I like a lot of time between eating and lying down! My boyfriend eats closer to 8. When we go out to dinner we compromise on 7pm. ☺️

I’ve been meaning to get the Whole Foods App! I go all the time so I don’t know why I keep procrastinating. Love your salads. Adding berries to salads has been my favorite thing lately.

We eat at 7pm and are usually in bed around 10pm (to wake up anywhere between 5-7am on any given day). The only time I snack is when I’m making lunch…I’m usually starving and can’t wait until my actual meal (usually a big salad) comes together. Snacking is usually cheese and crackers, a handful of tortilla chips, or some of those snap pea crisps (which I try not to buy because they’re addictive and disappear very quickly!).
I love these day of eats posts! And enjoyed reading Tina’s yesterday too!
I haven’t tried the snap pea crisps but now I feel like I should avoid them! 🙂

Omgosh I always snack while making dinner too. I try to snack on raw veggies like bell pepper or jicama and post dinner I get snacky when I’m unwinding watching tv… Lately here in California it’s too hot to make tea so I’ve been drinking la croix – I love the coconut flavor and the carbonation makes me feel full 🙂
this is a good idea ! anything carbonated fills me up too. i might have to try la croix as a snack after dinner !
Yes, carbonated beverages will fill me up too whether it’s sparking water, kombucha or a beer!

We’re eating dinner at around 8pm at the moment. I don’t tend to snack because I usually get dinner on while still in my yoga gear then take a shower/tidy the place up as it cooks.

I need to take a hint from you and clean while dinner is cooking! That would be a productive thing for me to do that would also keep me from snacking! 🙂
I do yoga daily, run and balance a career and wonderful husband/BFF relationship. We live in NYC and travel the world constantly. I have two awesome young adult children who are our bff’s as well as their significant others. Longwinded way of saying I am brand new to your big and think it rocks!!! Love it!!! And so does my daughter!!!

I’m generally a late dinner eater to due to my schedule (after 8PM). I have been trying to workout in the AM though which leads to a slightly earlier time (~ 730 PM). I dont know how people eat before 7 even if they get out of work spot on at 5. I would be so hungry by 9 PM if i ate at 6 or earlier. I never snack during breakfast (my BF makes it) nor lunch (i pack my lunch) but i do during dinner for sure! a little cheese here, a few crackers, some wine, etc. i also am very bad at snacking on the leftovers as i pack them up after dinner.
Haha, I think that all the time about eating at 6 p.m. I would be hungry before bed too! I hear ya on snacking on leftovers. Usually my fiance cleans the kitchen so I try to stay out so I don’t do it. 🙂
Ha!, loved the chocolate chips. I keep my bags of chocolate chips in the freezer and they are my go-to little “secret” snacks. My kids haven’t caught on to it yet. Since having kids we are typically done with dinner by 6:30, but every now and then it might be close to 7pm when we eat. Not too often though.

I am also a huge fan of sweet potatoes as breakfast food and usually add a teaspoon of ghee and also unsweetened shredded coconut! I also LOVE these posts, along with weekly workouts! Your blog is always full of awesome, useful and helpful content and I just wanted to say thank you! I often incorporate at least one of your workouts into my weekly schedule and find them efficient and fun!
Yum, yum! I fell in love with ghee during Whole30 and still cook my eggs in it sometimes.

I actually try to eat earlier so I can digest it, before jumping into bed, but it never happens, because I get distracted. As of lately, I typically tend to eat at 7:00 PM. I always love looking at your eats…So GOOD! XOXO
I am just never home from teaching/training/working out until 7:30-8 so eating before 8 is nearly impossible!
We generally eat 6:30-7:00ish, but if I have a late class, I’ll come home & reheat the dinner I made earlier for the rest of the fam & eat a little after 8:00. I often snack (I prefer to call it my “appetizer” – haha!) whilst making dinner. 🙂 We are usually in bed around 10 & up at 6.

I am HOOKED on sweet potatoes as a result of your Whole 30 posts. I cook five of them every Sunday, then eat one for a snack at school every day. I eat them straight out of the fridge and mush them really well, and I swear they taste like pudding, and are oh so good. Thank you for your food posts. I always find something to add to my rotation. I love the purple cabbage recipe. I’ve made it a few times and it is delish. I also want to say THANK YOU for being such an excellent yoga teacher. Your class this morning was fabulous (and packed!) as usual. You are always so present when you are teaching, aware of everything happening in the room, and focused on all of us– it makes such a difference to our concentration when yours is so evident, so THANK YOU!! 🙂

The sweet potato and cashew butter sounds good. I wish that I could like black coffee like you do. How do you? There’s no sweetener in it right?
Hey Elena – yep, no milk or sweetener. I’ve done black coffee since I first started drinking coffee. My parents and grandmother always drank theirs black so I just didn’t think to do it any differently.
I always buy good quality coffee and grind my own beans at home. I think that helps a lot!

Do you try to eat more on the days you work out? Or pretty much the same ish amount every day and figure it all balances out in the end?
Great question. I try to eat intuitively. If I’m hungrier on days I workout, I’ll eat more but usually I feel like it all just evens out.
I’m an early dinner eater, I have to have it 6-715 depending if I work out or not in the evening!! I always get so hungry around 5-530, Its impossible for me to wait until 9! Your stuffed spaghetti squash looks SO good I can’t wait to see the recipe.

Your lunchtime salads look so tasty! I keep meaning to try strawberries in my salads and then forgetting.
Usually we eat around 8-9pm. We both get home around 6, and then we’ll either go running or my fiancé will want a bit of relaxation time (stressful job). It’s rare that I’ll come in from work and feel like cooking straight away.
I don’t snack while I cook. I might steal a bit of one of the ingredients (especially if I’m chopping carrots) but I don’t usually feel like I want anything.
Strawberries in salads are so good. Do try! I love apples, strawberries, blueberries and figs in my salads when it comes to fruit.
I agree on needing a minute to go for a walk/run or just hang out before getting straight to cooking!
I never in a million years would have thought to put a nut butter on sweet potato.. but you inspired me and now I am ADDICTED. That is genius. I also put a sprinkle of pumpkin pie spice which took it up a notch. Thanks for the idea!

I eat dinner at 4 or 4:30 right when I get home from school (I’m a teacher)…I’m STARVING!!! I am up at 4:20 each day to workout so my body is more than ready by then! And Jen….the carrot cake you posted a picture of…AHHHHH!!! I love carrot cake 🙂 I looked up the menu to Namastay and I want to come to Charlotte from Illinois just so I can eat the whole menu!!! Love your blog 🙂
