Yesterday was a great day. Around 9 a.m. UPS delivered a big heavy box to my doorstep. I opened it to discover more avocados than I know what to do with. Heaven!
Chiquita is moving their global headquarters to Charlotte and I am lucky enough to have blog reader in the Chiquita Avocados division. Last week he left a comment asking if I’d like a shipment of avocados. Yes, yes, yes!
Little did I know that I would be receiving two giant bags full. I must have over 50 avocados. He told me that they will stay good for almost a month if I store them in the fridge but I’ll definitely be sharing with family and friends. I think this will also be a great time to experiment with some new avocado recipes and creative uses. Any good ones to share? Please?
I got right to work using my avocados last night. I like to start pulling things out of the fridge and figure out how I can use them together. Last night I heated some leftover refried beans and then sauteed chicken, onions, grape tomatoes and spinach. I layered the beans on a corn tortilla and then topped it with the chicken mixture and avocados. It was a good creation!
Breakfast this morning was a big bowl of oatmeal while I got my life organized. I was a woman on a mission and not only got a ton of work done but also got laundry done and the house completely picked up. There is not a misplaced item of clothing to be found. Now, we’ll see how long that lasts. I’m terrible about tossing things on the table or bed and leaving them there but it seriously stresses me out when I walk in the house and there’s stuff everywhere. The oatmeal featured bananas, blueberries and peaches.
I packed my lunch to take to work. It’s been a crazy busy day full of exciting work for our new location. My latest project is trying to get our website designed so I’m really enjoying that. I made a big salad with more avocados, goat cheese, local strawberries, broccoli slaw, mixed greens, almonds and tomatoes. I also had some Wholesome Goodness Multigrain & Flax Tortilla Chips and a pear with peanut butter later in the afternoon.

It’s a new style called the Daily Tank. It’s basically a spinoff of the Cool Racerback but with straight straps and a scoop back.
I love the open back. It’s perfect for showcasing a cute sports bra. I bought it in the flash color. Several of the girls in the store were telling me that they have actually worn this tank out with white jeans. It’s super cute. One note about the fit, it’s long and the straps are pretty long too so try it on if you can.

I love Lululemon, but I have to be careful cause I could spend all the money in my bank account. However, I am using my upcoming yoga teacher training (and the fact I’m a Health and Physical Education major) as an excuse to buy a few tops from there since they will last longer than others. The fact that they’re cute is also a bonus.

Avocado chocolate mousse!!
Loveeeeee that tank top. You are really lucky to have so many avocados. I like to use them in pasta sauce, vegetable salads and guac!
Wow, I had no idea they would keep in the fridge for a month! I have a few favorites in my blog:

I also recently made chicken and avocado quesadillas that were AWESOME but I haven’t blogged yet. Of course, you’ll probably still have a few fruits left when I update my blog next week.

Yum!! Your in avocado heaven. I love to slice up avocado and throw it on egg sandwiches.
Try a quinoa, lime, cumin, avocado salad. They’re super yummy! Plus, you can rarely go wrong with guac.

I wish I could eat avocado. I enjoyed them up until a month ago when I realized my stomach pains and racing heartbeat were the result of an avocado allergy. :-/

Oh man, I need that avocado-gifting friend, haha! I used to work at lululemon..man I miss it (and the discount). They have some cute stuff debuting lately – like the swimwear and a maxi dress today!

I HIGHLY suggest you make some eggs baked in avocados with a little sprinkle of salt and pepper. I saw the recipe originally on pinterest but its seems to have sprung up all around the blogging world recently 🙂

You lucky duck! I’m so jealous. I love making raw versions of key lime pie and chocolate mouse/puddings. I also like to begin meals with sliced and plated avocado with a tiny bit of shoyu or tamari with sesame seeds and sometimes toasted sesame oil. It’ so simple, but feels special and elegant…like eating sashimi before your meal.

Wow! That’s a LOT of avocado! We moved away from California this last year and I’ve been missing having available ripe avocados. They’re few and far between here, but when we get some I like to make open-face sandwiches on italian bread with mozzarella, tomato, basil and avocado, drizzled with olive oil and sprinkled with salt and pepper. So YUMMY. Tabbouleh with feta and kalamata olives and avocado tossed in is also wonderful!

I love making tempeh bacon and I use mashed avocado instead of mayo to make a tempeh, spinach, tomato, and avocado sammie. So good!

Love your blog. Thought I would share an awesome avocado recipe.
It uses 4 avocados at a time:
Avocado Pate with Parsley and Pistachios
Oil
4 ripe avocados/ peeled and pitted
2, 8oz cream cheese blocks at room temp
2T minced shallot
1T lemon juice
2t minced garlic
1t chili powder
1/2t salt
1/4 cup chopped fresh parsley
2T chopped unsalted pistachios
lettuce, chopped black olives, and chopped cherry tomatoes to garnish
tostito chips
Line a 6 cup rectangular glass loaf pan or ceramic dish with 3 layers of waxed paper, extending over long sides of pan only. Brush top sheet of paper generously with oil.
Puree avocados and cream cheese in processor. Add shallots, lemon juice, garlic, chili powder and salt and blend until smooth and creamy. Transfer into prepared pan, smooth top. Press plastic wrap onto surface of pate and refrigerate at least 6 hours or overnight.
Remove plastic wrap and unmold onto platter and remove waxed paper. Mix parsley and pistachios in small bowl. Sprinkle over top of pate. Garnish around all sides with lettuce, chopped black olives and cherry tomatoes. I usually do lettuce first and put olives and tomatoes on top of lettuce.
Serve with tortilla chips.

Ohh man I would LOVE to get a huge box of avocados! Lately I’ve been cutting them in half and sprinkling sea salt on top, then eating with a spoon. Not healthy to do all the time, but SO GOOD.

Holy avocados! That is so sweet that they sent you so many! You can also freeze them when they are ripe and put them into smoothies for extra creaminess! Its so good that way. Love that top, I’ll have to checkout lulu soon for that one.

Gosh – echoing everyone’s sentiments that you are a lucky duck with all those avocados!
I like to mash them on a toasted brown pitta bread, with cracked black pepper and sriracha sauce over the top.
Alternatively (and this is not very healthy, but is DELICIOUS for a treat) avocado tempura with sweet and sour sauce…highly recommended!
Whoa that’s a lot of avocados! If you like quick and easy dips, I make a normal guacamole and then add a bit of your favorite salsa and a bunch of feta cheese. Sounds weird, but it’s absolutely delicious and guests are always impressed – and you really don’t have to do much work at all! Just some mixing and some chip-picking.
P.S. you’re inspiring me to get back to the gym – I’ve been seriously slacking since our wedding and I’m feeling squishy. ugh.
