I have been so obsessed with this avocado, sauerkraut and scrambled egg toast combination that I couldn’t wait one more day to share it with you. It’s been on heavy rotation for breakfast, brunch, lunch and late night dinners. It doesn’t matter what time of day it is, it’s always the right time for this toast!
The combination of sourdough bread, mashed avocado, sauerkraut and scrambled eggs is so heavenly and so right. It’s one of those foods that makes you “mmm” with every bite you take.
The ingredients list is short and simple and ever since I started keeping sauerkraut on hand, I seem to always everything on hand to make it. (Running out of avocados is an emergency situation in our house. Right up there with bananas.)
The first step is to toast a piece of bread (or two if your bread is smaller but my dad makes giant sourdough loaves). Spread salted butter over the warm toast. Prep your avocado by cutting in half and removing the pit. You will definitely want to use a whole half avocado here.
Scoop the avocado out and use a fork to mash and spread on toast.
Next add your layer of sauerkraut.
And then top with scrambled eggs. Do yourself a favor and also cook the scrambled eggs in salted butter. I also love to season them with this Black Truffle Seed Salt.
If you want to kick it up a notch, sprinkle with red pepper flakes and give it a squeeze of Sriracha but if spicy is not your thing, it’s equally as delicious without.

Oh this looks insanely delicious! I LOVE sauerkraut but I’ve never bought it myself before… any recommendations on what to look for? What section of the grocery store would I find it in? 🙂
hey nicki! you can either find it in a can with the canned vegetables or i usually get the kind that is cold and in the refrigerated section. it may be in the deli or near the dairy or in the produce section…ask your local store!
I like avocado, tomato and egg white toast. Wish I like sauerkraut since it is so good for you. Do you know what recipe your dad follows for his sourdough? I use a recipe from Flour Water Salt Yeast, by Ken Forkish. I also make sourdough dog biscuits with my starter.
I have never thought to add sauerkraut! I make my avocado toast just like yours – some times I make the egg ‘over easy’ for a change. I love sauerkraut and it SUPER easy to make on your own (surprisingly!) I will now be adding it to my avocado toast! Thanks for the recipe!!!
yes, i do the eggs like that sometimes too for a change. i like having the yolk spread around.

Looks great! You should add a little milk (personally I use rice milk or soy milk) into your eggs and constantly stir until done. The milk makes them sooo much lighter and fluffier, which is perfect for this recipe!

My favourite thing to put on toast is a combination of raw peppers, spring onion, chicken breast and marinated artichoke. It’s so satisfying!

my fave thing to put on toast is peanut butter. a huge amount of peanut butter 🙂 second place is my moms “cinnamon toast” toast with butter, a little sugar/cinnamon combo added whtn the butter is still warm and melty so its sticks. i have not made cinnnamon toast in years ! and now you got me craving it !

Just made this for breakfast – yum! I live in Australia so its winter here. The combination of warm eggs and chilli made it a weather appropriate brekky here.

Here I was thinking this was my invention… haha. I enjoy mine with poached eggs and homemade aioli (with the avo). Try making your own sauerkraut… seriously if you knew how simple it was to make you would never buy it again. It is soooo simple … google it! Breakfast, lunch or dinner… it’s ALWAYS delish. 🙂

I made this yesterday morning and it was delicious! Using sourdough bread really makes a difference here. I added a slice of bacon to mine and it was to die for, thanks for sharing!

Just saw this recipe and going to have to try it. I have been making scrambled sauerkraut and eggs and eating it on rye toast for 40+ years! I learned it from a German friend I had in high school and it has been a family favorite every since. But avocados are our favorite food, so we’ll have to try adding that to the mix! Try scrambling the eggs and sauerkraut together…I’m guessing you’ll love it!
