I am back in Charlotte and it felt like a giant exhale to walk into my front door this afternoon. Being away, especially in times of grief/pain, definitely gives you a renewed appreciation for not only life but all the small things in life we have to be grateful for. I am really looking forward to being back into my regular routine this week.
One part of my regular routine that I’m most looking forward to getting back into the swing of is menu planning. I feel like it’s been several weeks since I’ve done it and after four days of eating on the go, I’m like, “give me all the sweet potatoes/cashew butter/salads/quinoa/salmon/etc.”
Here’s what’s on deck.

Meal Plan Week of 12/11
Sunday: Seared salmon over sweet potato and chickpea salad with a spiced date vinaigrette
Monday: Slow cooker sweet potato chili with cornbread (I may do a salad on the side but only if I don’t eat one for lunch)
Tuesday: Kale pesto cavatelli with crispy brussels and sundried tomatoes and sliced pan-seared chicken breasts
Wednesday: Ahi tuna deconstructed sushi bowls
Thursday: Tofu bahn mi sandwiches with kimchi mayonnaise (I’ll probably do homemade sweet potato fries on the side)
Friday: Leftovers or Postmates. Maybe date night in but only if I feel like cooking. ๐

Monday: 4.8 miles at 8:22 pace…cold, rainy and perfect but I did almost get hit by a car. UGH to dark, winter running.
Tuesday: Hot yoga
Wednesday: 3.5 mile Aaptiv treadmill hill sprint workout (so hard) + strength

10 barbell floor press (75#)
Thursday: Hot yoga class at HEAT Yoga in Clearwater

Saturday: 5 mile run at 8:19 pace
Sunday: 3.5 mile run at 8:52 pace + hot yoga at Y2

this week im eating chili i made on sunday night. i put some italian sausage in and put some avocado on top. why have i never thought of that before ??
