Since I only posted a recipe last night and no details on my day, I have so much to catch you guys up on!
Wednesday night I was invited to a BLEND (bloggers + friends) party at Lululemon Charlotte. I have so enjoyed getting to know Meg and Mimi from Lululemon so I was very excited about the opportunity to spend an evening trying on Lululemon clothes, practicing yoga and spending time with some of my favorite Charlotte bloggers.
I wasted no time getting myself into the running shorts that (the other) Jen raved about. I also tried on the most comfortable pullover ever that will be coming home with me sometime this winter! ๐
While I was there I picked up another Power Y tank in purple (my new favorite if you can’t tell by all the posts I’ve worn it in!). I love it and am so happy to have another one of these tops in my workout rotation. I reiterate…sometimes it’s worth it to splurge on quality workout clothes. Especially when you spend as much time in them as I do!

After the clothing extravaganza, we enjoyed a very relaxing yoga flow led by Elizabeth. She just finished teacher training with Rolf Gates last weekend. (CONGRATULATIONS Elizabeth!!!).
We were encouraged to write down goals before we left. I’ve been bouncing one around in my head for a couple weeks now and I finally decided to make it official.
The sign reads, “I will complete an 8-week ashtanga challenge by December 18, 2010.” After the marathon, I am looking forward to focusing on my yoga practice. I just want to learn and grow as much as possible and I think this challenge will be just the thing to kick-start that. More info to come very soon!!!
Skipping ahead to today…I set my alarm for 5 a.m. to get up and go to yoga but woke up in the middle of the night and decided to reset it for 7:15. I am really trying my best to embrace the taper and not overdo it. I just keep telling myself that it’s only two weeks! I had a bowl of pumpkin oatmeal for breakfast.
Lunch was a veggie burger.
I topped it with sharp cheddar, avocado and spinach. Cantaloupe on the side.
I wasn’t really hungry for a snack but I knew that since I was teaching BodyPump after work I would regret not having one.
BodyPump was really fun tonight. Our class numbers have kind of been down lately (very typical for this time of the year) but tonight we had a big group for some reason. There is nothing that motivates me more than a room full of members who are ready to work! ๐
We had quite the dinner tonight. A month or so ago I spotted this pimento cheese stuffed chicken on fellow BodyPump instructor Q’s blog. Ever since I sent the link to Brandon he has brought it up every time I’ve asked, “what do you want to have for dinner.” BUT his idea was to wrap it in bacon.
Chicken stuffed with pimento cheese and wrapped in bacon. Kale and roasted acorn squash on the side. This was a delicious dinner. I mean, there just aren’t even words to describe the goodness of stuffed chicken wrapped in bacon.
And tomorrow is Friday!
Oh WOWEE-KAZOW-EE. You stuffed the chicken w/ Pimiento Cheese and then wrapped it in bacon???? STOP. I’m dying. Just launched Combat and taught BP 75 for the first time tonight and was FAMISHED after class. Had a horrendous tapas dinner at a place by the gym and seeing this post makes me wish I had been at YOUR house for dinner. What a brilliant twist on the idea.
Oh – you’ll also be amused to know that this girl left the house this a.m. w/ clothes to teach Body Pump, but forgot clothes to teach Combat. Ran down the street to the Lulu by my gym, dropped $100+ on Be Still Capris and a t. Needed new gear anyways but still. How crazy is that. Didn’t have time to run home:( Had no choice! Thank God for Lulu!
I have that pullover and I absolutely LOVE it! I would definitely recommend. The blend party looked so fun!

That chicken looks amazingly delicious! My favorite cheese spread AND bacon?! That dinner photo just melts my heart. And speaking of delicious, I want everything in lululemon! So happy Birmingham finally has a store! Love your goal and can’t wait to follow your progress!

I ran behind you for about 10 miles or so. Was hard to miss you .com shirt. You wear running pretty strong. Congrats on your accomplishment. After viewing your pbr.com site I am very jealous of your husband’s position in having the fortunate situation of sharing the delightful menus/foods/recipes that you showcase on your site. My wife and I are slow transitioning to similar kind of diet and I am in awe and excited of the numerous selections available. Keep them coming and again, congrats on your accomplishment. P.S. Trust me. That 4:00 or sub-4 goal will be calling your name and haunting your sleep in due time. I predict you will take another stab at it in the near future. ๐
