Hey there. We’re gearing up for snow overnight in Charlotte. I don’t think anyone has a confident bet on how much but I’ve heard anywhere from 3-8 inches. I’ve spent most of today working on communications for the studio as we’ve had to cancel our first weekend of teacher training and some early and late classes tomorrow. I know it seems like nothing to those of you in snowy clients but we’re just not equipped down here to deal. 🙁
I sat down at my computer about an hour ago to start this post but then I got an alert about the shooting this afternoon at the Fort Lauderdale airport. My heart dropped. First, because these public shootings are just senseless and tragic. And second, because my parents were just there this morning. They are leaving on a cruise from Fort Lauderdale today. Their flight to Fort Lauderdale connected in Atlanta and they were worried about getting stuck in Atlanta because of the winter weather. My mom and I talked at 10:30 p.m. last night and she said Delta had just rebooked them on a super early flight so that they could get out and through Atlanta before the storm. This put them in Fort Lauderdale this morning instead of at 1 p.m. as originally scheduled. The shooting happened in the same baggage claim terminal they had just been through right when they originally would have been arriving.
I am praying for the victims of that shooting and also thanking god for getting my parents through there earlier. It’s been such a hard year for them and I am so grateful that they can enjoy this vacation.
Hug your people tight.
Speaking of my people…my friend Virginia texted and invited me to go for a run. I declined because a) I lifted this morning and b) it’s cold. She offered to take Zoey with her and I was like, “YES.” (The three of us ran together on Wednesday.) She scooped up Zoey and when she brought her back they had run 6 miles at a 7:50 pace. I told them they don’t even need me anymore, I’m slowing them down. She said the first mile was a 7:20 and she had to slow Zoey down. That girl LOVES to run.
My eats for the week are not very exciting because January in the fitness industry is kicking my butt. It’s wonderful and insane all at the same time.
Breakfast
Leftover egg casserole with strawberries. (You’re going to see a lot of this egg casserole.)
Banana egg white oatmeal. I never eat oatmeal anymore and Tanner said he was craving it on Wednesday morning so I whipped some up…and I didn’t love it. My oatmeal hiatus will continue. This is crazy because I used to eat oatmeal or overnight oats every single morning.
Smoothie bowl.
Chia pudding eaten at the gym between training clients and working out.
Lunch
I ate so much avocado toast this week.
Exhibit B.
Exhibit C. And there’s one more I won’t show you for the sake of monotony.
Dinner
Sunday night dinner (New Year’s Day) was filet, leftover mashed cauliflower, leftover steamed green beans and latkes with apple cranberry relish.
Monday night was a bunch of random stuff thrown in a bowl. Couscous, roasted broccoli, roasted green beans, chicken sausage and butternut squash with some hummus.
I cooked on Tuesday. Chicken breasts and roasted brussels with leftover couscous.
On Wednesday I ate another bowl like Mondays but it was even more desperate so I didn’t take a pic. 😛
Sushi out with a friend on Thursday night.
I’m off to the studio to teach one more class and then I’ll practice. I need to grab a few things at the store but I’m terrified to go to the grocery. I’ve heard it’s a madhouse with people stocking up. Cross your fingers that we don’t lose power and that we all stay safe this weekend.
Sending you guys warm wishes for a good weekend to come.
xx

What an unexpected blessing to be moved to an earlier flight — I cannot imagine how devastating and terrifying this is for everyone involved and their families. Just terrible.
You definitely have a cool friend in Virginia — and now a happy and tired pup.
Good luck with the snow!
I know, I wasn’t able to stop thinking about it all weekend. So grateful that the weather unexpectedly changed their flights. Such a blessing.
I had goosebumps reading about your parents. I am so glad they were able to book an earlier flight!
Your food pics look amazing! I don’t know how you make food look so pretty :). All I know, I want to eat all of it…lol.
Hope you make it through the snow storm safely. My kids would love for our area to get a few feet but, to be honest, I am so tired of cold weather and snow! I need some warm weather to get myself motivated to workout again! 😉
Hey Holly – I know, I’m so grateful that the timing worked out in their favor, unknowingly. RE: the food…lots of practice. I don’t even realize I’m doing it anymore. Haha.
And I FEEL YOU on the cold weather and workout motivation. It’s terrible.
What a blessing about your parents. Praying for your safety this weekend– stay warm!!
I feel so grateful for their timing. Thank you Katherine!
That is terrifying and so sad about shooting. I am so glad your parents are safe! And that Zoe, what a speedy runner.
Thank you Danielle. These public shootings are the worst and make me so sad and angry.
I’m so happy your parents are doing OK and that they could’ve skip that horrible situation from Fort Lauderdale’s airport yesterday.
Thank you so much and me too. <3
Your meals always look so good! On week 2 of Whole 30 I’m going to try and make some of your whole 30 friendly meals bc they are seriously so impressive!
Thank you! 🙂
wow that hit close to home for you i’m sure. im so glad they are ok and enjoying some time away.
i am the same with oatmeal. used to eat it daily but now….my stomach pretty much hates it other than here and there. its just not something that sits right with me especially early in the AM.
I couldn’t agree more. It sits so heavy with me. Crazy how our tastes can change over time, right?
