Happy weekend.
Here’s what my Saturday looked like.
I opened the yoga studio at 7 this morning and closed it at 5 this evening. I subbed four classes for a grand total of FIVE hours of teaching. To say that I am exhausted would be an understatement. And not only did I teach four classes but they were four different styles – super flow, hot vinyasa, vinyasa basics and power 1. It was a long but amazing day of teaching. It was really cool to feel the different vibes in each class and to touch everyone from first-time yogis to veterans. Teaching makes me so happy! ๐
It’s been a while since I’ve updated you on food + fitness so here’s a quick snapshot of the past two days.
I attended a hot vinyasa class Friday before work and then had overnight oats at my desk.
Blueberries, bananas and peaches were the highlight of this mix.
Lunch Friday was an awesome veggie sandwich combo. Mashed avocado, cherry tomatoes, leftover sauteed squash and zucchini, spinach and jack cheese. After a trip under the broiler it came out cheesy and delicious!
I spent Friday evening cleaning the house and then took Sullie for a three mile walk.
I whipped up a quinoa bowl for dinner. I roasted eggplant and cherry tomatoes and then served them over a bed of spinach topped with quinoa. I sprinkled chopped olives on top and made a Greek yogurt sauce with plain yogurt, lemon juice, oregano, basil and salt and pepper. I had a bowl of vanilla ice cream after dinner.
Breakfast this morning was eaten in the car on the way to teach. No picture but it was a cinnamon raisin English muffin with peanut butter, honey and mashed banana.
I ran home for all of 20 minutes after my morning classes to quickly shower and change. I had to be at the Y at noon for a group exercise meeting. I quickly threw together a green monster – banana, blueberries, vanilla protein powder, plain greek yogurt, ice cubes and spinach. I drank this in the car on the way to my meeting. Not good that my breakfast and lunch were eaten in the car today!
I was in serious need of caffeine before my second set of classes so I grabbed a soy latte from Starbucks. A 100 degree day was NOT coming between me and coffee!
I was starving when I got home after class so I made a small cheese plate to hold me over. Mmm…cheese! ๐
Off to meet a friend for wine. Crazy, crazy day but so thankful for the opportunity to do something I love so much!

Longtime reader/lurker here! Just wanted to say it’s inspiring to see the ways that you still manage to eat healthfully, even with a packed schedule/while on the go… Thanks for sharing! Oh, and what is in the middle of your cheese plate? Honey?

My weekend was pretty non-busy, for once! I’m enjoying NOT going away for the first time in awhile.

Wow! That is impressive! You MUST be exhausted. I would be tired just from all the talking, let alone the exercise!!
OH MY GOODNESS…..five hours of teaching!!! Girl, you are my hero! Cheese plates are my favorite!
