In case you haven’t noticed, this week has been a little crazy and I have been focused on things other than the blog. Apologies. Even when I’m busy and stressed, I try my best to get good meals in. It can be a challenge because sometimes I lose my appetite when I’m stressed and the last thing I want to do is prepare a meal but I know I have to slow myself down and eat.
So here’s a quick look at all the things you’ve been missing out on this week. I’ve tried to get some high-calorie foods in to pack a punch (lots of nut butter, brownies, cookies! :)) since eats have been sporadic.
Salad with whatever I could find in the fridge plus a cookie from one of my sweet yogis! She said that since I brought them cookies a few weeks ago, she wanted to return the favor. Peanut butter chocolate chip…her mom’s secret recipe. SO GOOD.
Lots of peanut butter, honey and banana sandwiches and toast. A combo that will always comfort and satisfy.
Fueling the teaching fire with soy lattes. My lunchtime yoga class appreciated this today! 😉
When in doubt, roast dinner. Oven to 400. Tempeh with Trader Joe’s Island Soyaki, sweet potatoes with Dizzy Pig Pineapple Head and broccoli. Threw it all in for about 25 minutes.
And then bake brownies…and top them with ice cream. All better.
It’s been a while since you’ve seen one of my open-faced creations. Great Harvest Dakota topped with roasted red pepper hummus, leftover tempeh, spinach and cheddar.

i agree! youre the sandwich queen. PB and Banana can be the most comforting with a glass of milk. Reminds me of childhood too.
