I have some fun happenings and yummy food to share with you from the past couple days since yesterday’s post was a nostalgic review of the last year. Thanks for reading and for your nice comments! I honestly can’t wait to see what the next year holds for us. Life truly is a journey!
So here’s my first big news to share. I have been participating in BodyPump classes for three years, two of which I have been an instructor. I have never been able to convince Brandon to come to a class with me and he’s never seen me teach. He works out regularly and has come to spin and yoga classes with me but he just would not get on board with BodyPump.
Here’s what went down on Tuesday…
Me: Do you want to come to BodyPump with me tonight? I’m teaching.
Brandon: No.
Me: But you don’t even have to do the leg stuff if you don’t want to – you can step off to the side. (He has knee problems) And I reallllllyyyyy want you to see me teach.
Him: I really don’t want to.
Me: I’ll take you to Wild Wing after for “two for Tuesday.”
Him: OK, what time are we leaving?
Lesson learned. Tempt husband with wings and beer, you get your way!
He did an awesome job at BodyPump. He didn’t even look like a first timer! I think he was surprised by how many men were in the class and how hard the workout was. He said that he won’t go regularly but if I beg he’d go every now and then. Success. 😉 I do have to share though that his legs are insanely sore. I don’t think he’s ever done so many squats and lunges in one sitting.
I wanted to take a picture of both of us at BodyPump but that’s where he drew the line.
And then there was my payback. We went to Wild Wing at the Epicenter thinking they would have the “two for Tuesday” wing special. Apparently, they stopped participating a few months ago. Bummer. I haven’t had wings in years so I decided to share some with Brandon because honestly, there was no healthy option on that menu. I had five or six and then got kind of grossed out and couldn’t eat any more. I also had a lot of celery. Brandon was very happy though!
When we got home I was still hungry so I ate a piece of banana bread with peanut butter. Brandon looked at me like I was crazy.
And here’s my second bit of news to share. I went to a hot vinyasa yoga class at Y2 Wednesday morning and noticed that Kath and Emily were there. I have seen them in my classes before and I follow both of their blogs. Since we had a few minutes before class started, I decided to introduce myself. They were both super nice and even checked out my blog later that day (very cool!). They invited me for a group run next Sunday. Fun! I’m looking forward to meeting some other Charlotte runners and bloggers.
Yoga was awesome. As always. I was definitely craving something cold for breakfast afterwards.
Enter a protein packed green monster (which is more brown than green because of all the chocolate protein powder I added but I promise there was a healthy dose of spinach in there).
And a beverage trifecta at my desk. Green monster for fuel, coffee for energy and water for hydration.
Lunch was another Amy’s veggie burger. Loving these things.
Veggie burger, sprouts, tomato, lettuce, shredded mozzarella, ketchup and mustard on a 12-grain English muffin. Half of an apple with a little peanut butter on the side. Later that day I snacked on a Cherry Pie Larabar.
After work I came home and cleaned and worked on these enchiladas for dinner while Brandon was at bowling (lucky guy!).
They were awesome! This is definitely my new favorite chicken enchilada recipe. I love that the sauce is homemade and not from a can. I whipped up some quinoa with onions, garlic, red pepper, black beans, corn, lime and a little parsley on the side. Awesome combination.

I feel the same way about wings. Every six months or so I convince myself that they are not really as fatty and chewy as I remembered. Graham will beg for wings and I am yet again reminded why I don’t ever want to eat them. You were a good sport for trying though. Great bribe for body pump!

These enchiladas were delicious! I loved the homemade sauce. No MSG!!! The sauce seemed a little thin but thickened right up during the oven time. Yum, yum.
