As an employee of the Y, I am required to maintain a Basic Safety Series certification. We have to get re-certified each year so I spent tonight reviewing rescue breathing and CPR. Tomorrow we review oxygen administration, AEDs and first aid. Honestly, I wasn’t thrilled about having class tonight and tomorrow from 6-9 p.m. after a full day at work but when I think about the possibility of having to use these skills one day, I am reminded that I want to stay on top of it! All the familiar phrases are coming back, “check, call, care” and “look, listen, feel.” I think the worst part about the re-cert is having to watch the videos for the millionth time. Talk about bad acting!
I am SO happy to report that I’m feeling 90% better today. I can fold forward again without excruciating pain and my neck is feeling pretty good to0. I’m just left with bruises in a lot of random places – cheek, shoulder, elbow, shin. Thank you all for the concern and kind words about my fall. It was not a fun experience.
Breakfast this morning was banana oatmeal at my desk. Lunch was a salad enjoyed outdoors.
Spinach, strawberries, carrots, feta, dried cranberries and pecans with homemade dijon balsamic honey vinaigrette. A slice of Great Harvest Whole Grain Goodness on the side.
The weather has been beautiful here this week. Highs in the upper 50s and 60s and sunny.
I’m not the only one who’s enjoying the weather. Sullie has been spending her afternoons outside channeling her inner jungle dog! ๐
I knew that I’d be having a late dinner after class so I packed an afternoon snack.
Grapes and a Pure Cherry Cashew bar. This was my first time trying Pure bars and I was impressed. They’re similar to Larabars in that they are raw, gluten free and made with just a few real ingredients. I’ll definitely be picking these up again to add to my bar rotation.
I managed to squeeze in a super quick run after work before my training. I just packed clothes and ran straight from work. I got about 3.5 miles in at around and 8:30 pace. It felt so good to be out there and my back didn’t bother me at all.
My late dinner featured leftover crab cakes.
In sandwich form with the chili mayo and mixed greens. I’ve seen crab cake sandwiches on restaurant menus but I’m not sure if I’ve ever actually had one. I can now say that crab cake sandwiches are very tasty!
And how can you say no to dessert when you have this in the fridge? (Actually, I have a hard time saying no to dessert just about every night!)
Leftover Valentine’s peanut butter pie. Yuuuummmm…..

of course! i rarely buy dressing anymore because homemade is so easy. i’ll snap some photos next time i make some (which will be soon) and post the recipe and some variations! thanks for asking ๐
I can’t wait for those warm temps to come up here. I miss running outside! It’s supposed to be high 40s tomorrow so I might venture out. ๐

I have to be CPI (crisis intervention) certified for work and we’re had training this week, too. The videos are from the 80s…very exciting! So glad to hear that you’re feeling better!

haha, i guess “the camera adds 10 pounds” doesn’t apply to dogs! i think it’s just the way she’s sitting because i can assure you she’s not tiny. she weighs around 65 pounds!
After I lived in Maryland with my aunt and uncle a couple summers I fell in LOVE with crabcakes (in any form… as an appetizer, as a meal, on a sammie, etc!) You just cannot get great crab in the midwest where I’m from!
