Happy Saturday morning! I’m up bright and early getting ready to head off to day one of my weekend CrossFit Level 1 Trainer Course. It should be a very interesting day, to say the least!
It’s been a while since I’ve shared a “day of meals/eats” with you and you’ll soon see why. I haven’t been to the store since I arrived home from the beach so it’s been a lot of grabbing something out and desperation meals from the pantry/freezer.
Case in point…Friday breakfast was an egg and cheese bagel after yoga.
Lunch was black bean and corn enchiladas from Trader Joe’s that I got out of the freezer. I did finally pick up an avocado and a few other staples to hold me over. I had to use plain Greek yogurt in lieu of sour cream because I opened my sour cream and it was moldy. The expiration date isn’t until November so I was annoyed. I have had a big issue with Trader Joe’s brand dairy/ready-made stuff being moldy lately. I’m going to take it back.
I spent the afternoon/early evening studying for my CrossFit exam and cake baking before heading out to a birthday party! I made my dinner out of Mexican cheesecake, buffalo chicken dip and other various delicious and sinful appetizers.
Including this beautiful antipasto platter. I was obsessed with the presentation and all of the things included. Is this not the most perfect impressive yet relatively easy thing to bring to a party?
Then it was time to sing to the birthday girl. Votives in place of candles…it works! She requested “chocolate!” when I asked her cake preference so chocolate I delivered. Dark chocolate cake with chocolate ganache filling and chocolate cream cheese icing. Thanks to all of you who weighed in on Facebook regarding what type of frosting to go with. The chocolate cream cheese was perfect (and trust me, I sampled enough of it while I was frosting the cake to know). Go big or go home, right?
It was such a fun evening. I’m just sad I had to head home early to prepare for my big weekend. Here goes nothing. Pray I not only survive this but also pass the exam tomorrow. It’s supposed to be really hard! Yikes. Oh and I have to do “Fran” for the first time ever today so I’m expecting to truly feel like I’m dying by the end of that. How I’ve managed to CrossFit for as long as I have and avoid Fran is beyond me.

I’m not entirely sure, but I think the expiration date applies to the un-opened product. Once it’s open, there’s no guarantee for how long a food product stays fresh, not moldy, and edible. I’m guilty of opening large containers of yogurt, forgetting about them, and then rediscovering them a week later covered in mold. It is frustrating, though. Feels like such a waste!
Vanessa, I think you are right. Usually the date refers to the last date you could open the product and still eat it. If you open it a month before the date though, it won’t last the rest of the month (in my experience anyway). I have had the same issue enough times that I should know this by now!

Y’all are right. I know there is usually a 7-10 day window but this had not been open long at all and I’ve purchased hummus and other things there that had not even been opened and had mold. Boo!

That antipasto platter looks amazing- what a great idea for something to bring to a party! And that cake looks ridiculous!!! Good power food before fran! Good luck today.

Wow that food looks incredible! Egg and cheese bagel is always my go-to, once I found something I like it takes me forever to switch it up! Good luck with your studies and exam!

I love the Fran fear… I too have avoided Fran for some 5 months now. I am so excited to read your certification post… once you have mentally recouped that is! Also, I am so impressed you are going to physically take that back to TJs …. stick it to the man!
