This has been the week of desperation meals after a tragic event on Sunday night. I somehow managed not to shut the fridge all the way and it stayed slightly open for about 10 hours. The next morning all of the food was warm and I had to do a total toss of most of the food in my fridge…including the huge batch of chicken tortillas soup I had just made.
I haven’t had time to do a restock at the store (and am not looking forward to spending all the money) so I’ve challenged myself to clean out the pantry/freezer and make do with what I have.
Omelet with frozen broccoli and spinach, chicken apple sausage and toast on the side.
Oat bran with pumpkin puree, apples and banana. Made with water…no milk. Not the same!
Whole wheat cous cous with the rest of the frozen broccoli and spinach, chick peas, nutritional yeast and avocado.
Okay, I think you get the point.
I was thrilled to have dinner plans with two of my girlfriends last night.
We went to Maverick Rock Taco. It’s relatively new but I had been hearing great things so I was excited to give it a try.
We started with margaritas…which all fun girl’s dinners should. I had the paloma with silver tequila, grapefruit juice and fresh lime juice. I cannot handle triple sec and typical margarita mixers – instant stomachache. This mixture was everything a margarita should be!
We ordered the salsa trio to start with red salsa, avocado tomatillo and pineapple mango salsa.
It took us quite a while to make a decision on our food. There are so many taco choices! I asked the waitress a million questions and then finally went with one calamari with jicama slaw, salsa and green chili ranch and one slow-roasted pork with the pineapple mango salsa on corn tortillas. I also ordered a side of Mexican veggies.
I really enjoyed my meal at Maverick Rock Taco. They have a cozy atmosphere, good food and great service.
I have to admit that I’m feeling a bit blah today after Mexican food and staying up to late watching thew news. I think I have an election hangover. But it’s painting day! I am so excited to say goodbye to pink beige. Can’t wait to show you the new color I chose. 🙂
What a terrible way to start off the week! At least it’s given you an opportunity to use up what’s in your freezer (something I should be working on myself). Girls nights and margaritas make everything better 🙂

I have definitely done that with our fridge. It is such a bummer!
I’m the same way with margaritas – I love them but can’t stomach the traditional triple sec ones. Especially the ones at barbecues or parties used with the pre-made mix…bleh. I love a good mango margarita at a nice restaurant!
Mmmm, those tacos look superb! It doesn’t help that I am completely in the mood for Mexican, either….We’ve done the same thing with our fridge. It’s always fun to wake up and find the contents of your freezer melted into a puddle on the kitchen floor….not.
Oh no!!! I have had a fridge full of food go bad before, and it is not fun…but you are definitely making do with what you have! Looks like you had a fun night out last night, and it was much needed. Good luck with the painting!!!
Oh no, I’ve had that happen before. Not too much fun. Mexican is always fun for a girl night, especially when it includes margaritas! Can’t wait to see the paint job.
Maverick Rock Taco looks good!! I checked out their website and see they are on Montford. That is so becoming a restaurant hot spot! Have you been to Good Food on Montford? Really good! I’m seeing a little bowling and tacos in my future!
I love the combination of grapefruit and tequila, you have me craving it at 10 in the morning…NOT NORMAL. I hate throwing away food, but sometimes you have to bite the bullet. Food poisoning and stomach issues are not worth it. I have been making my oat bran with so delicious SF coconut milk and it make ALL the difference.
That is just called a Mexican Dinner hangover. It is absolutely unavoidable even without the margarita, no worries. Also, I can’t believe you even had the ingredients to make 3 complete(and nutritious) meals from your freezer/pantry. Impressive to say the least. I am pretty sure I would be eating dog food and ben and jerry’s. :/
