Hey there. Since next week is going to be a “regular” week for me with no travel or company, I wanted to map out my meal plan for the week. It is super helpful in making sure a good dinner happens because evenings tend to be a little hit or miss with Finn.
WEEKLY DINNER MENU
Saturday: Virginia is coming over and we’re doing sous vide salmon, asparagus and salad. She’s not eating grains at the moment but I’ll probably make couscous or quinoa for myself.
Sunday: Nourish Foods BBQ Chicken and Collard Greens. I’ll also add a baked sweet potato.
Monday: Nourish Foods Beef Bernaise with Carrots and Spinach Soufflé.
Tuesday: a lasagna from Pasta & Provisions from the freezer + salad.
Wednesday: mango chicken freezer meal that a friend brought. Served with veg and steamed white rice.
Thursday: leftover lasagna + salad
Friday: TBD, maybe something fun like takeout sushi or Thai food.
LAST WEEK’S WORKOUTS – 13 WEEKS POSTPARTUM
It’s been a while since I’ve recapped a week of workouts. Here’s what last week looked like…
Saturday: 3 mile run
Sunday: REST (walked around the Biltmore)
Monday: REST
Tuesday: 30 minute walk
Wednesday: 30 minute walk
Thursday: 4 mile run + 20 minute unilateral strength workout
Friday: AM + PM walks (it was so gorgeous outside…I think I covered 5 miles total)
LAST WEEK’S EATS
Smoothies have replaced smoothie bowls because they are MUCH easier to drink while tending to Finn in the mornings. Fun fact…this smoothie has 28 grams of protein in it! Recipe on Instagram.
Same smoothie as above, minus the spinach but add frozen riced cauliflower.
Two eggs scrambled in salted Kerrygold butter, blueberries and two slices of Great Harvest Cinnamon Bread with butter. That bread seriously tastes like dessert. It’s SO good!
I used the some Tuscan Chicken Salad from a Nourish Foods meal and made it into a sandwich with tomato and avocado. Farmers market peach on the side.
Nourish Foods sweet potato and chicken with sriracha cream sauce, add avocado. Nourish Foods sent me a selection of their meals to try, both lunches and dinners, and I’ve LOVED having them available for an easy meal. The great thing about them is that they are fully prepared…just heat and eat! Everything I’ve tried so far has been great and I’m excited to try the dinners in the next couple of days too.
A mix of spinach and arugula tossed in balsamic, olive oil and honey and then topped with a grain blend, toasted pecans, tomatoes, avocado, dried cranberries, feta and broiled salmon.
Baked lemon chicken with sauteed mushrooms, steamed basamati rice and steamed broccoli. I made this for my mom and me and we both loved it. Here’s the chicken recipe that I used.
Another meal I cooked when my mom was here. Marinated flank steak with salad and corn on the cob.
And finally, my mom is the best influence when it comes to “treats.” We had this mixed berry pie from The Fresh Market with ice cream on two nights when she was here! The Fresh Market makes really delicious pies, FYI!
What’s on your dinner menu next week?
Would you pick pie and ice cream…or cake and ice cream? I love cake and I love ice cream but I don’t love them together. Pie and ice cream is a different story! 🙂
I’d pick fruit pie and ice cream over cake every time! I’m not a big fan of cake.
I love cake, but prefer ice cream with pie. I plan on making lentils with potatoes to have a few days for lunch. I bought a copy of the Inspiralized and Beyond cookbook. I’m going to try the shredded brussels sprouts carbonara and the portobello mushroom bulgogi bowls for a few dinners.
