A little over 24 hours later – including 4.5 hours of yoga – and I’m back. I survived yoga bootcamp and even went back for more today. Yoga bootcamp was an awesome experience – as expected. There were 13 of us in the class. Celeste and Tanner lined us up in one long line and put us to work.
The first two hours of class were the standing series. Lots of hard work including, handstands, headstands, arm balances (um, you would laugh if you saw me attempt some of these – not pretty!), backbends and abdominals all mixed in with our normal postures like triangle, half moon, warriors and so much more. I cannot even begin to explain to you how much sweat left my body during yoga bootcamp. I could literally wring water out of my top and my YogiToes mat. It was gross – I feel bad that Celeste and Tanner had to touch me. Throughout the course of the class I think I drank three 32-ounce Nalgene’s of water.
The third hour of class was Long, Slow, Deep (overview of what LSD is in this post). We held each pose for 5-10 minutes. It was a great way to end bootcamp. By the time we got to Savasana (the final resting pose in all yoga classes) I was falling asleep. After class my body was completely physically spent. Love that feeling. I can’t wait for the next bootcamp at Y2!
Post-yoga. Shower time. I’m gross.
After I showered I got dressed and put some apps out. My in-law’s stopped by for happy hour to see all the work we’ve done on the house. They offered to take us to dinner at Dressler’s and we happily agreed! Dressler’s is based out of Huntersville and just opened a second location in Charlotte at the Metropolitan.
I started out with a small portion of Brandon’s Caesar salad, a piece of bread with some delicious honey butter and a glass of Cabernet.

For my entree, I chose the Scottish Salmon with risotto, oven roasted tomatoes and a lemon vinaigrette.
They had amazing looking Scottish Salmon on special at Earth Fare yesterday but I resisted buying it because I wasn’t sure what our dinner plans would be and Brandon doesn’t love salmon. When I saw it on the menu at Dressler’s I couldn’t pass up ordering it! I ate about half to two-thirds of this and forgot my leftovers on the table. Boo. Was hoping to eat the leftover salmon on a salad.
And of course I was not going to say no to dessert. I felt like I earned it after four hours of working out yesterday.
Ever since seeing Ellie post on Twitter that she had carrot cake for breakfast I’ve been seriously craving it. So excited that they had homemade carrot cake on the dessert menu. I dominated this – it didn’t stand a chance. 🙂
I came home and tried to watch Sweet Home Alabama in bed but I think I made it all of two minutes before I passed out.
I had some buttermilk in the fridge that needed to be used so I decided to make buttermilk biscuits this morning.
Breakfast was biscuit sandwiches. Mine had egg whites and cheddar cheese with apple slices, OJ and coffee on the side.
Not much going on today. We visited Brandon’s grandmother, ran errands and grocery shopped. I decided to go to my favorite hot yoga class with Suzanne at Charlotte Yoga this afternoon. I thought I wasn’t that sore from Yoga Bootcamp but I was so wrong. Hello delayed onset muscle soreness. I still really enjoyed the class but tried to take it easy. At one point Suzanne came over and asked why I was staying in half-splits instead of going into full and I had to explain the soreness level in my hamstrings!
We decided on fish tacos for dinner tonight. So fresh and healthy. Here are all of the toppings set up and ready to go.
Shredded purple cabbage, avocado, limes, Baja cream sauce, cheese, salsa and hot sauce.
I sautéed some tilapia with Dizzy Pig Jamaican Firewalk and made a version of this Black Beans and Rice recipe on the side. I totally recommend this for a healthy Summer dinner.
We just ate brownies and ice cream (I warned you guys that I have a major sweet tooth!) and are finishing up the season finale of Desperate Housewives. Headed to bed shortly after since I have to be up bright and early to teach BodyPump. We’ll see how my soreness level is tomorrow. Yikes!
