Happy new week! I’m here to talk food as I am overdue a recent eats round up and I’ve had Trader Joe’s shopping trip photos edited for over a week now. So hopefully this post can serve as inspiration to to make this a great week on the eating front. 🙂
RECENT EATS
Cottage cheese scrambled eggs, toasted Dave’s Killer Cinnamon Raisin bagel with butter, watermelon and grapes. I have been craving all the fruit lately.
Breakfast in my car while working and pumping in between teaching yoga classes. 🙂 Overnight oats in a peanut butter jar with a healthy dose of chia seeds.
PBJ, chips and grapes. Probably my favorite simple lunch of all time.
If you don’t follow along on Instagram and missed this salad…YUM! Chopped spinach, hardboiled egg, feta, strawberries, grapes, avocado, toasted pecans, dried cranberries, homemade Greek yogurt honey mustard dressing.
This dinner was easy and good. Trader Joe’s roasted cauliflower and cheese ravioli with my “perfect chicken breasts” and a side salad. I seasoned the chicken in salt, Trader Joe’s lemon pepper grinder and Trader Joe’s 21 Seasoning Salute. I kept the ravioli simple and tossed it in olive oil. This one is so flavorful on its own!
Oh here’s another easy and flavorful one thanks to Trader Joe’s. I chopped and sautéed a chicken breast and then added a packet of Trader Joe’s cauliflower rice stir fry. When it was almost done, I added two eggs and scrambled them in the pan with everything. I seasoned it with some coconut aminos. I usually eat it just like that but since I had some leftover marinated cucumbers and Asian carrot/cabbage slaw from a Blue Aron dinner, I added that on top. It gave the dish a nice freshness/crisp.
Here’s the Blue Apron dish that the cucumbers and slaw came from. This was a Korean-style burger. I added tots on the side. 😉
Another Blue Apron. This was a chicken and poblano pepper quesadilla smothered with a slightly addictive sour cream/poblano/tomatillo sauce. And I thought the carrot slaw on the side would be weird but it totally worked. Shredded carrots with pickled jalapeño and a little olive oil.
Finally, a grilled cheese on a night when nothing else sounded appetizing. Sourdough, butter, bacon, cheese, fig jam.
WHAT I BOUGHT AT TRADER JOE’S
I always start with the produce. Beets, medjool dates, bananas, kale + greens salad kit, apples, avocado and lemons.
Turkey, ham, ravioli, goat cheese, feta cheese, unsalted butter (for baking), Kerrygold salted butter (for day-to-day eating).
All the frozen things! Melodious blend, chopped spinach, sliced peaches, mango, açaà packets, strawberries, cauliflower rice, raspberries and cauliflower/broccoli patties.
Finally, Finn loves these breadsticks for a snack/something to hold and crunch on. Also…black beans, a balsamic fig dressing that is only so so, coconut water (have been craving lately!), chopped green chiles, ginger tea, honey, a grapefruit scented soy candle, artichoke hearts, chili lime seasoning, rolled oats and sparkling water.

Lately I’ve been loving curry with naan bread for a quick suuuuper comforting lunch 🙂 And sadly, I moved to Canada a few years ago and (aside from my family) I miss Trader Joes more than ANYHTING!

I love Trader Joe’s salmon. My go to meal with it is cooking it well done (crispy) in a cast iron pan, and then serving it with rice and avocado chopped up in a bowl.
Tots for sure!! We buy the Lamb Weston Potato Puffs at Publix. They’re the best frozen tots I’ve ever had. Comfort food for me has to include cheese in some way….grilled cheese, mac ‘n cheese, pizza. As long as it has cheese!!
LOL…both tots and fries. i cannot choose, depends on my mood ! No trader joes by me at all either. Comfort food for me needs to involve something that is hot and smothered in cheese. Like maybe mac and cheese ? though i suppose that is not quite quick and basic. at least not homemade. i have recently pretty much given up dairy so anything warm and cheesy sounds awesome to me right now !!!
I am a huge fan of fries, I always get them everytime I go out to eat! My favorite basic meal would definitely be a salami sandwich with tomato sauce. I know it sounds so weird but I love it!! Thanks for sharing, hope you are having a great day.
