Hi and happy new week. I hope it’s off to a good start.
Having my mom, aunt and cousin here over the weekend for my baby shower made for a very special time. There was minimal working and lots of fun and hanging out.
FRIDAY
I subbed out my Friday classes so that I could run errands and spend time with my mom. Our day started with a failed trip to the DMV (didn’t have the right documents + the line was WAY too long) followed by a Target run, a lunch date and a visit to Erin McDermott’s studio to pick out jewelry for my baby shower dresses.
We had lunch at the Mayobird…one of my favorite spots in Charlotte. I hadn’t eaten there in way too long and it was delicious. They have a menu of 10-15 different chicken salads that you can choose to have prepared in all sorts of ways from a salad plate to a sandwich melt.
Once we got home I took the girls for a long walk. I think we went 3.5 miles. It was so pretty outside!
I knew it was going to be cold, gray and a little rainy on Saturday and Sunday so we had to soak up the sun while we had it.
We ordered Thai delivery for dinner and watched an episode of Mindhunter, which we are trying to get into while my mom is here.
I also had some apple pie and ice cream before bed. We got this apple pie from the bakery at Whole Foods and it’s so good!
SATURDAY
Saturday morning started with Zoey snuggles on my belly and a smoothie bowl. I just love how Zoey can be so wild and wide open but sweet and snuggly too.
I took and taught a yoga class and then had lunch at Namastay Kitchen. Brussels sprouts.
And the Namastay Bowl.
Next stop was the nail salon to get my polish freshened for my baby shower and then to the grocery to get stuff for dinner since my aunt and cousin were to arrive shortly. I had to wear the pedicure flip flops into the grocery because I forgot to bring other shoes!
Back at home I made salted fudge brownies, rice krispie treats and an enchilada feast for everyone. We had white chicken enchiladas with black beans, rice and Mexican chopped salad.
My aunt and cousin arrived around 5:30 and we hung out and chatted for a while before dinner was ready. Dinner got slightly delayed because a certain puppy (I’ll let you guess which one) stole the package of 20 tortillas off the counter and ate them ALL while we were upstairs looking at the nursery. I can’t even imagine how her belly must have felt after 2,000 calories of flour tortillas. Another grocery trip was required to finish dinner.
Dinner was so good. This is my favorite enchilada recipe ever…I’ve been making it for over 10 years. I promise to share it here in the next few weeks.
SUNDAY
We decided to venture out of the house on Sunday morning for a trip to Sunflour. How in all of my years of eating at Sunflour have I missed their cheddar biscuits!? I had an egg, cheddar, bacon and avocado sandwich on a cheddar biscuit and it was to die for!
Needless to say, a walk was in order when I arrived home to recover from that biscuit. My mom, the girls and I walked about 2.5 miles before getting ready for my shower.
I’ll share more shower pics in tomorrow’s 34 week pregnancy post but it was incredibly nice and me and baby boy felt so loved.
We wrapped up our Sunday at Village Tavern where I had a spinach salad with salmon. I needed some veggies and protein after my enchilada feast, the cheese biscuit and shower cupcakes. 🙂
It was a great weekend full of family, friends and lots of yummy food.
THOUGHT FOR THE WEEK
I themed my Saturday morning yoga class around this reading (read the quote and the caption). The work of staying open, being vulnerable and expanding is my biggest personal challenge and something I have to truly effort to actively work on consistently. I love these words about it.
Do you like biscuit breakfast sandwiches? Favorite combos?
If you had to choose…brownie or rice krispie treat?
Did you spend time outside over the weekend?
Eek! Zoey sounds as bad as my Hermione. This one summer (in the span of about 2 months) she ate a box of 5 protein bars (wrappers and all), a 2 lb. bag of rice, and about 2 cups of dry grits…
OMG! Zoey ate some bars a couple of months ago…unwrapped them and everything. But lord…rice and dry grits…that is bad! That could not have felt good in the belly!
Please share the recipes for the enchiladas and the slaw, they look so yummy!
The enchiladas I will post soon, the chopped salad was a kit from the grocery!
Yes please! I need that recipe!
I love that reading that you themed your practice around.
Thank you. <3 And I’ll post recipe soon!
Can you post the chopped salad recipe?
It was a kit from the grocery store for a southwest chopped salad!
Gahhhhhh I just love you. I just feel like we’re best friends and we’ve never even talked. Haha. Thank you for sharing your heart on this blog. I’m so excited for you and you’re growing family!! Can’t wait to follow along the journey. <3
OMG this comment made my day! Thank you so much for reading and for sharing in my enthusiasm! 🙂
