Happy Sunday! I’m glad to be back in meal planning mode after a few weeks of being out of the routine. I haven’t really cooked a meal since we’ve been back since we had teacher training this weekend so I can’t wait to get in the kitchen tonight.
I went to the farmers market on Saturday morning so most of the meal inspiration this week is coming from my purchases there. I’ll share them with you in the weekend recap post on Monday.
This Week’s Dinner Menu
Sunday: pappardelle with fresh ricotta, basil oil and squash blossoms (I am also going to add some roasted or sautéed cherry tomatoes)
Monday: green coconut curry with tofu, eggplant and peppers over steamed rice
Tuesday: miso baked cod with roasted yukon gold potatoes and sautéed squash, zucchini and Vidalia onions
Wednesday: southwestern turkey burgers with avocado and spicy aioli with kohlrabi and carrot slaw and roasted sweet potatoes
Thursday: kimchi fried rice topped with fried eggs (I’ll cook extra rice on Monday for this since leftover rice works best for fried rice)
Friday: leftovers or Postmates
Saturday: out
Recent Workouts
Here’s what workouts have looked like lately starting with the day we left for vacation.
Wednesday: hot yoga class before heading to the airport!
Thursday: 3 mile treadmill run + 3 rounds of 20 wall balls and 20 kettle bell deadlifts with my friend Lina (the workout SERIOUSLY helped us recover from our overnight flight and avoid the urge to nap)
Friday: 5 mile run (it was my birthday and I have a tradition of always working out on my birthday to celebrate my healthy body!)
Saturday: just lots of walking around Bruges
Sunday: 3.5 mile run before catching a bus to Amsterdam + biking all over Amsterdam (probably 15 miles or so!)
Monday: biking around Amsterdam (probably 7ish miles or so)
Tuesday: 60 minutes power yoga with Lina and Tanner, I got the vote to lead us through the practice
Wednesday: 3.5 mile run before heading to the airport + lots of airport walking
Thursday: teach Y2 strength + 30 minute walk
Friday: 3.5 mile run
Saturday: REST

I found some raw turmeric on this week’s farmer’s market trip! It’s definitely giving my smoothies a kick.
Okay, here are my weekly deets: menu includes LOTS of seitan, oil free popcorn, black bean pasta, cauliflower pizza crusts, and marinated tofu; workouts include LEGS LEGS LEGS; and my playlist is all about Kendrick Lamar. Gotta love them all!
Loved this playlist! Made 5am on a Monday so much more enjoyable (as did 65 degrees and zero humidity).
No dinner plans for the week yet — I need to sit down and plan it out before heading to Costco later tonight!
