Morning. It’s cold and gray in Charlotte this morning.
Perfect weather for the first fire of the season last night. Fires and candles make things so cozy. Especially for watching my newest obsession Scandal. This show is highly addictive. I started watching it on Netflix a few weeks ago and I’m already halfway through season two. Kerry Washington is so beautiful!
Some recent meals for you.
Two eggs scrambled and a green smoothie.
Another green smoothie and coffee. I really just wanted to showcase my cups! 😉
Salad packed with super foods…kale, spinach, mango, avocado, salmon, artichokes, pecans, goat cheese, tomatoes and salmon.
Homemade tomato soup. I sauteed onions and garlic, deglazed the pan with balsamic vinegar, added some spices, tomatoes and vegetable broth and let it simmer for about 30 minutes. Pureed the mix in the blender in small batches to get the soup smooth and added a little plain Greek yogurt for creaminess.
You can’t have tomato soup without grilled cheese!
Leftover lemon chicken with roasted mushrooms, asparagus and butternut squash. So simple, so clean and so yummy.
I’ve got this sweet face in my lap while I work. Time to be productive!
Hey Jen, did you use fresh or canned tomatoes for the soup? Looks so yummy and we have a run of cold weather coming…
whole canned plum tomatoes and pureed them!
28 oz can tomatoes (juice and all)
1 onion
3 cups veggie broth (or chicken)
dash balsamic vinegar
couple tablespoons sugar
salt & seasonings to taste
plain greek yogurt (about 1/2 cup) blended in at the end

I am recently totally hooked on Scandal too – to the point that I need to get caught up on the episodes so I can get something else done in my life! Love the Gladiators!

The food you posts always looks so delicious! I would kill to have a fireplace in my apartment…makes me feel at home.

I wonder who has more golden retriever “stuff” in their house? HAHA! With 3 golden retrievers split between my family the dog gifts are never ending. I mean how can you not spoil them? HAHA! It’s 80 degrees and humid here, so no fires today. DOH!
Such a great idea to add Greek yogurt to the soup for creaminess!! I will definitely try that 🙂
can i recommend coconut milk in your tomato soup next time…… takes it to another level 🙂
