A little change of pace today. Instead of a recap of my day, I want to share five dinner ideas that are both healthy and easy. I find that no matter how busy and crazy my life gets, cooking a healthy and delicious meal at the end of the day helps me to relax and reconnect. Brandon and I always sit down at the table together to eat (unless it’s taco or pizza night – then we eat at the coffee table in front of the TV!). Both of us grew up eating in families where dinner was always enjoyed together at the table so this has been something we’ve done since we moved in together over five years ago.
Here are some of our favorites. I would love to hear what some of your favorite healthy dinners are (feel free to post links in the comments!) and if anyone else loves to have dinner at the table!
1. Baked Eggplant Parmesan – Italian night is always a favorite in our house. I like to serve this baked eggplant parmesan over whole wheat spaghetti or on its own with a salad.
2. Island Pork Tenderloin – this pork tenderloin is coated in a spice rub that is full of warm flavors, seared in a skillet and finished in the oven with a delicious glaze.
3. Fish Tacos with Baja Cream – Fish tacos are a healthy way to enjoy Mexican food. Try the Baja cream with light mayo and Greek yogurt. It is a wonderful topping for the tacos!
4. White Chicken Chili – I’ve been making this chicken chili for years. It gets its thickness from a can of pureed white beans instead of adding cream. It can easily be adapted for the slow cooker and freezes wonderfully!
5. Chana Masala – This vegetarian dish is packed with wonderful ethnic flavors. A must try with warm, freshly baked naan.
