Happy Friday!
I have a quick break between classes so I thought that I would get you updated before the weekend. Be on the lookout, I’m going to be posting my first real workout post this weekend. I did an outdoor cardio strength circuit yesterday that I want to share with you. It was a tough one! I was hoping to get it up today but I want to do a quick video demonstrating the exercises and I have no one to shoot it for me.
And now, a quick look at Thursday.
There was a special event with a big gathering of food trucks yesterday. It just happened to be minutes from our house so we took advantage of the event and the beautiful day and enjoyed lunch outside.
I ordered lunch from The Herban Legend.
I had a Curry Chicken Salad Wrap with grilled chicken, curry mayo, grapes and pecans on a tomato basil wrap.
Brandon ordered his lunch from a different sandwich truck and went with a meatball sub. Clearly, he was very excited about it! (And look how long his hair is getting! He got a little trim yesterday.)
We couldn’t leave without a stop by the Southern Cake Queen truck for some cupcakes.
We took them home and split a strawberry with buttercream and a carrot cake with cream cheese frosting. Overall, they were pretty good but we were a little surprised by how small they were given that they were $3 a piece.
After my cupcakes settled, I headed to the park to kick my own booty with the circuit workout. Get ready!
Dinner last night was Sole Amandine with Shredded Brussels Sprouts and roasted acorn squash. I chose this recipe because my local store had sole on special but when I arrived they were sold out. I ended up subbing flounder which worked but the particular flounder I got was a little off in texture. I really liked the flavors in this dish though. The crunch of the almonds was perfect to balance out the fish and the brussels sprouts.
I taught and practiced yoga this morning before coming home and making a green smoothie. Into the blender went blueberries, spinach, almond milk, vanilla protein powder, chia seeds and half of a banana.
Off to teach a couple more classes and then it’s time for the weekend! We have a fun family afternoon planned! ๐

I still need to try eating at a food truck. I think they have some in Dallas that I need to locate!
That wrap of yours looks amazing! I am all about wraps and I am always trying to find new things to put in them. Seems like the possibilities are endless!
There are no food trucks where I’m at which is such a bummer because they look awesome. Maybe I should start my own food truck :] Have a great weekend!
