Happiest of Fridays! I hit the ground running after the long weekend with my family and this week has flown by in a haze of early mornings and late nights. This weekend we have our eighth and final weekend of our Winter/Spring 200-Hour Teacher Training and our trainees graduate on Sunday night. I’m looking forward to soaking up one more weekend with them. They are an amazing bunch!
I have a fun round up for you of things I’ve been loving this week so I’m going to get right to it.
Arriving home to dinner after my weekend away.
I took a late flight back to Charlotte on Monday and didn’t get home until almost 10 p.m. I opened the door to find this dinner on the table. My fiance surprised me with rack of lamb, roasted asparagus and roasted carrots. (And yes, he cooked it!) I added some of my dad’s freshly baked sourdough to the table with some olive oil and balsamic.
North Carolina strawberries.
I was a little disappointed by the Florida strawberries that were in the stores this season. They didn’t taste sweet or especially like a strawberry. They kind of tasted like nothing. We’re finally in NC strawberry season and they are so good!

Warm sunny days.
It’s been really pretty in Charlotte this week. And warm! We’ve been in the 80s most days and next week it’s supposed to be 90. The girls are spending tons of time sunbathing.

Reminiscing with my grandmother.
We went through a scrapbook that I made for her about 7 years ago and it was full of good memories and laughs. (Fun memory…I used to put on full-out dance and gymnastics productions for my grandmother and her neighbors when I visited. And let’s just say that my dancing skills leave a little something to be desired.)

Meet Paul Newman. My friend Ashleigh has an older girl around the same age as Sullie and has been thinking of getting another for over a year now. She finally took the plunge and brought Paul Newman home.
The report is that Delilah needs some time to adjust to her new baby brother. She’s giving him a bit of a cold shoulder right now. I nearly cried laughing at this photo. He’s like, “I just want to be close” and she’s having none of it.

So curious about your smoothies post Whole 30 – are you keeping with the whey even though you’re now mostly dairy free? I am also 99% dairy free and always thought that meant staying away from whey – just curious for your input! 🙂 Thanks

Great question! I have done a bunch of reading and whey protein definitely can be a trigger. When I think back to when I was breaking out badly, I was using protein powder in my smoothies almost every day. My skin is pretty clear now so it will be a really good test to try to use it for a week or two and see if anything happens. I’ll keep ya posted if it does!

I am loving Ina Garten’s recipe for curried chicken salad. It is easy to make and great to have on hand after a long day.

I live in Florida and I am SO disappointed with the strawberries this year. What the heck!! I expected more, FL. lol guess I need to visit NC for my strawbs!
Michigan strawberries are amazing too! The large tasteless picked-before-they-ripen strawberries are not really worth it to me, I don’t “hate” them because they sometimes have a good texture and mild fruity flavor, but nothing beats a fresh sun-ripened berry! Your teeth are so white, I am jealous! Do you have a special regimen? I have been rinsing with hydrogen peroxide to tackle my coffee stains and it seems to work ok.
