Happy Saturday! I hope everyone is having a great weekend. My Saturday has been full of cleaning and yard work…which is not exactly fun but I feel so much calmer when my house is clean so it’s worth it.
Lots to catch you up on. Let’s start with Friday and roll through today.
I started my Friday with an awesome hot vinyasa class before work. I am obsessed with the warm up that we did – it was challenging and had me dripping with sweat before the sequencing even began. I left with a huge smile on my face and was ready to tackle the day.
Cold and creamy breakfast at my desk. Oikos Super Fruits Greek yogurt with bananas and pineapple stirred in. Topped with granola, strawberries, almonds and dried cranberries.
It was a typical Friday at work…why must everyone wait until Friday to decide they need something? I rushed around all day like a crazy person. I finally broke for lunch around 2 and ran home to let Sullie out and make a peanut butter, honey and banana sandwich which I ate in the car on the way back to work.
I was more than ready for one of these when I finally got home at 6:15!
I considered going for a run but opted for a Shocktop + an orange and reading Southern Living on the patio instead. As I was reading through the magazine, I saw a recipe for a lemon coconut pound cake and noticed I had all the ingredients in my fridge. The next thing I knew, I was baking a cake!
The cake turned out beautifully! The lemon coconut flavor was the perfect twist on pound cake for Spring.
Sullie entertained us while we were hanging out outside.
Mmmm….stick.
We opted to stay in and cook at home so I handled side items while Brandon grilled.
I made risotto and spinach salad with strawberries, blue cheese almonds and honey balsamic vinaigrette. Brandon grilled tuna for me and a steak for himself.
It was SO nice out so we ate on the patio. Outdoor dining is one of my favorite things about warm weather! It was a great Friday evening at home. Call me a nerd but I think it’s so relaxing to stay home on Friday night to relax and unwind after a busy week. Saturdays are usually our “go out” night.
I was up at the early hour of 6:30 this morning because I had to teach a strength training class at 8. After class I came home and got busy cleaning. I broke around 11:30 for a late breakfast.
Egg scramble with crumbled tempeh, spinach, mushrooms and feta. Toast and fruit on the side.
This afternoon I’ve been working in the yard and I took Sullie for a run. Now I’m off to shower and get ready for a fun Saturday night. We’re going to see The Avett Brothers!!!

Love the cake, it looks perfect for spring/summer! I’m so jealous of your weather, we are FINALLY going to see something warm today 77, but then it’s back to the 40’s and 50’s the rest of the week.

I LOVE to eat dinner and have drinks on our deck once the warmer weather comes around! I was just telling my husband on Friday night that you couldn’t pay me to go out anymore on a Friday!!! Saturday night is our “going out” night too!

That cake looks super delicious. My apartment doesn’t have a patio/balcony and it’s gorgeous here today. That means I have to go out to eat where they have an outdoor patio! =)
