Happy Friday. I hope that the week is winding down for you and that you’re headed towards weekend relaxation mode. Since you heard from me last I got a killer workout in (I’m going to post a wrap up of this week’s workouts tomorrow), sat in an afternoon of meetings, drove my car into a wall, taught yoga, went out with the girls and then spent most of this morning talking with my insurance company about the car into wall incident. I’m okay, car will be okay so more on that later! 🙂
A few food pics for you and then a couple event announcements.
Post workout lunch yesterday was a salad with kale, spinach, cucumbers, beets, chick peas, pine nuts, hardboiled egg, feta and pomegranate seeds. I was so excited when they had the pomegranate topping option!
I ended up subbing a yoga class at the very last minute and then heading to my friend Sarah’s one year anniversary party for her online boutique Social Dress Shop. Sarah has amazing clothes that fit all budgets so be sure to check out her site. I am so proud of what she has accomplished over the past year and last night’s party was a huge success. I can’t wait to show you the two dresses I picked up.
After the party I met up with some friends at Soul Gastrolounge for wine and small plates. I ordered these pork belly tacos and they were melt in your mouth good. They were topped with pickled watermelon. The evening consisted of many laughs and great conversation. So grateful for my girlfriends.
I made another green smoothie for breakfast this morning so that wasn’t worth photographing. Lunch was. I threw together a salad with a lot of randoms from the fridge and it was awesome. Baby kale (<– on a huge kale kick), quinoa, rotisserie chicken, roasted butternut squash, mushrooms, avocado, dried cranberries, pumpkin seeds and shredded white cheddar. Topped it off with a drizzle of olive oil and fig balsamic.

Charlotte readers! Please stop by Common Ground Farm Stand’s Cornucopia event on Saturday between 9 and 1:30 p.m. A little about Cornucopia…the event is in it’s fifth year and supports the Urban Ministry Center here in Charlotte. This year’s event promises to be bigger and better than ever with a live band, food truck, vendor appearances and a silent auction. There will be tons of homemade food for purchase that can help get you through the busy Thanksgiving week. Think frozen family-size dinners so you don’t have to plan Thanksgiving Eve dinner, pies that you can add to your dessert spread and breakfast casseroles to have on hand if you happen to have a house full of guests.

Excited for you to post the dresses that you picked out! I LOVE wearing dresses. They’re just so comfortable and versatile, plus I like to show off my strong legs. Skinny jeans can be too restricting with these quads. LOL! Have a wonderful weekend!
Jen this isn’t related to this post necessarily but I really would love your opinion. I know you cross fit and like you, I love high intensity fitness. I love fast but not long runs, nothing more than 3.5 miles if fast, up to 5 for distance but then i start hating it. Anyways, I always see pictures of women who crossfit and YES they are strong looking but they get kind of manly looking in their upper bodies including the pros. I understand it is great to be strong but I love the leaner ripped look you have. I am similar in build as you and am curious as to how you stay lean and not get big muscles…is it because you eat at maitenance calories and not bulking? Are these women eating in excess to gain that muscle? I am just curious as to why most cross fitters I see get huge shoulders and chests and honestly, I don’t find it appealing on women, although on men it looks great! Do you think by doing it only once a week and switching up your workouts it helps keep a more feminine athletic shape? I really love the look if you have of lean muscle and any tips you have are much apreciated… I believe in lifting heavy but this whole crossfitting with huge bars and slamming tires around just seems weird to me. Any response you have is much appreciated.
