Hi and happy Monday! I hope that your week is off to a fabulous start! I got up and practiced yoga this morning and it was the most perfect way to kick off a short week. I’ve got a fun last-minute quick trip planned for this weekend.
It’s not always easy to get out of bed at 6 a.m. on a Monday morning but it’s always worth it once practice is done. I feel a million times more energetic and mentally ready for the week when I do get up and practice.
I brought back the overnight oats for breakfast this morning with a fall twist…bananas, apples, pumpkin, pumpkin pie spice, plain greek yogurt, almond milk, oats and almond butter and cranberry toppings. I wanted to love this but I didn’t. I still wanted a smoothie. Oh well.
I was holding on to summer despite it being the first day of fall with Sunday night’s dinner. Roasted okra and eggplant, sliced tomatoes and a turkey burger topped with a chili aioli.
I had a really nice Sunday. I taught yoga in the morning and then came home and whipped up a frittata and baked Paleo pumpkin apple muffins.
I had high hopes for the muffins. They tasted good but I need to make a few modifications from a texture standpoint before sharing. I will try again! ๐
The frittata had sauteed zucchini, squash, onions, sundried tomatoes and sharp white cheddar. I haven’t made a frittata in a long time and I love how easy they are for brunch and how well the leftovers keep/reheat.
I spent the rest of Sunday at Target and Nordstrom Rack (<– trouble), cleaning the house, packing for my trip (FIVE days early, that is a record!) and then ran three miles solo and walked Sullie two.

I love productive Sundays! Do you have a go-to frittata recipe?
i don’t really but my general method is to saute whatever veggies i want to use in an 8-inch cast iron skillet, add meat (if using) and then pour the eggs over the veggie/meat mixture, top with cheese of choice and then you can either let it set in the skillet and finish it under the broiler to brown or you can pop it in the oven at 350-400 and let it cook for 5-10 mins until set and turn broiler on for last minute or two to brown. they are SO versatile and easy!
That fritata looks amazing! And Thanks for the reminder – I need to take a break from cooked oats and ventured into overnight oats again – yes, I am in denial bout the beginning of fall

I also got in trouble at Nordstroms Rack this weekend. I have a DVF sitting on my bed that I am still deciding if I need to have. I think eggs are the easiest way to use up veggies and get something yummy without any recipe or plan.

my pink shoes are inov8’s and they’re a hybrid running/weightlifting shoe for crossfit.
i do love the mizuno wave elixir. it’s my fave current running shoe.

I spent Sunday cleaning, too, and I feel so great about this week now. Something about having a clean slate that makes Monday easier to deal with.
