Full disclosure on this healthy living blog: after my post earlier in the week about how to menu plan for the week and avoiding the temptation to eat out on a weeknight, I totally caved last night and we went out for dinner. 😳
It is extremely rare that we eat out on a weeknight but after teaching BodyPump I just didn’t have it in me to cook. I’m still battling this sore throat and I was seriously craving Brazwells’ patio with a veggie wrap and fries (gasp!). I don’t crave fries often but when I do it’s always Brazwells or Lebowski’s. And Brazwells makes the best veggie wrap. Tons of sautéed fresh veggies with provolone cheese. I always dip mine in honey mustard. Yum!
I had intentions of running this morning to atone for my French fry sins but my throat was so scratchy so I decided not to push it. Hard for me but I’m so ready to get over whatever this random bug is. I want to enjoy my long weekend!

Yoplait Greek Vanilla Honey Yogurt, Earth Fare Tahitian Vanilla Granola, dried fruit and nuts. Wish I would have had some fresh berries to top it with but oh well. Still a great breakfast. I like to put my yogurt parfaits in the freezer after assembling them so they’re super cold. I usually assemble the mix while I’m making coffee and put it in the freezer until I leave for work. By the time I get to my desk it’s the perfect temperature.
I had PB&J on the mind all morning (nut butter withdrawal from not having any with breakfast!).

I went to Earth Fare after work to pick up a few Synergy Kombucha drinks to try to kick this sickness out of my body. I can’t say enough good things about kombucha. It’s definitely an acquired taste but so worth it for the health benefits. Today I tried the strawberry flavor and it’s definitely my favorite one so far. Also restocked on Justin’s Maple Almond Butter. I resisted buying more because it’s quite pricey ($11 for a jar) but I have so missed it this week.
Tonight we’ve been getting the house ready for my parents to visit. They arrive early tomorrow afternoon and I can’t wait for them to see the house! They’re also going to help us create a plan of attack for our yard because we are clueless about yard stuff. I’m sure we’ll learn as we go!
We originally planned on grilling kebabs tonight but it started looking rather stormy while I was at the store so I made a game time decision and switched dinner to grouper.
On the fly I decided to saute grouper and serve it over risotto. I made a quick topping of sautéed grape tomatoes, shallots, garlic and artichokes. I also roasted some broccoli and heated some sourdough bread.
After dinner I whipped up some lemon bars to have around while my parents are here. I was going to make chocolate chip cookies too but I was out of chocolate chips! I don’t remember the last time I had no chocolate chips.
I’m going to be up early tomorrow morning to finish a few things around the house, attend Suzanne’s hot yoga class at Charlotte Yoga and finally hit up the farmer’s market before my parents arrive. Hoping to also have time to give Sullie a bath.

I almost always have chocolate chips on hand too, in fact I usually have several bags of them because I’m always worried about running out. You never know when the urge for choc chip cookies will hit 🙂
