One guess where I am. Asheville. I just can’t stay away! I have been planning a girls weekend getaway for months and it’s finally here! You all know how much I love Asheville and I’m thrilled to be here on such a beautiful weekend with wonderful friends. I knew today would be crazy trying with work and preparations to leave so I had the foresight to make overnight oats last night for breakfast.
I took a 6:30 a.m. hot yoga class, rushed home to shower and headed to the gym to teach an 8:30 yoga class. I was able to eat half of my breakfast before class and the other half after I finished teaching. Do what you gotta do!
I had a sushi date for lunch and given that I’ve been craving it all week, it really hit the spot. We split a ton of sushi. This was the lunch special…a sweet potato tempura roll along with a crab, avocado, salmon and whitefish roll.
And also a super crunch roll and tuna nigiri. I was stuffed after all of this but it was an awesome Friday lunch.
After lunch I ran some errands and then headed home to get packed up. I met my friends at Trader Joe’s where we stocked up for the weekend before hitting the road. I was a pretty miserable passenger and spent the majority of the two-hour trip coughing. I felt so guilty but luckily my friends are so kind and caring. They should have made me take a separate car! 🙂
Once we arrived to discover our beautiful house everyone’s spirits were lifted. We got a killer deal on a great mountain house right outside of Asheville. It’s the perfect home base for all the activities we have planned. We wasted no time getting all of our snacks and wine unpacked and exploring.
The house easily accommodates the four of us and we each have our own bedroom with space to spare. We kind of wish we were staying for a week!
We had grand plans of going out for pizza but loved the house so much that we ordered in instead. I took a really hot shower while waiting for dinner and it helped my cough so much.
We went a little crazy with our dinner order. Two family style salads, spaghetti and meatballs, two pizzas and a slice of carrot cake. What can I say? We are ladies who love to eat!
Friday night pizza has to be the best thing ever.
We spent hours hanging around eating, talking and drinking wine and hot tea.
I made a batch of my favorite salted fudge brownies yesterday for the trip and we all enjoyed them alongside a little carrot cake for dessert.
It’s after midnight and I need to get some rest. I’m leading everyone on a 5+ mile hike tomorrow that I have never done before. I’m super excited to hike, picnic and be outdoors but pray I don’t get my friends lost in the NC mountains!!!

You know those hypothetical situation questions where they ask you what you would eat in a day if it was your last 24 hours on Earth and there were no concerns other than how much you adore the food? Well, I would choose to eat just like you did in this post. I’ve never seen so many delicious things in one blog post!

Sigh. This makes me teary. I can’t think of any place I’d rather be than “home” on this first day of fall. Instead I’m living the cruel joke of a 97 degree high here in Dallas. Of course, I want to know where the house is and what hike you’re doing today! Have SO much fun!!! 🙂

OK, hands down, this looks like the perfect way to spend the weekend; surrounded by yummy food, good friends, beautiful surrounding during my absolute favorite time of year. Gah, I can’t get over how amazing it all sounds. Have a wonderful time. 🙂
