I really have not felt inspired to document all of my food over the last week or so. I’ve been enjoying the flexibility of sharing with you what’s on my mind – like long runs, abs and beach trips. Besides, I think it’s more interesting that way. Do you really care what I eat for breakfast, lunch and dinner every day? Especially when it’s repetitive?
One of the main reasons that I enjoy sharing meals with you guys is to give you ideas – not to “journal” what I eat. So here are some of my favorite eats over the last few days.
Dinner Monday night was Garden Vegetable Enchiladas.
I used this recipe from Bon Appétit as my inspiration but made modifications to the filling to amp up the vegetable content and variety. While this is a meatless dish it is not necessarily a very healthy dish. The sauce calls for whole milk and cheese but you could easily sub two percent for the whole milk since you are using a flour base to thicken. (But don’t go lower than two percent or you will have a soupy mess.) I’m sure you could also cut back on the cheese in the sauce. I served these with quinoa with sautéed onions and black beans.
I was so looking forward to yesterday’s lunch. I had a lunch appointment at Varji & Varji for a brow wax (I’ve said it once, I’ll say it again – Charlotte readers, Ariana is amazing!!!) and Earth Fare is conveniently right next door. I hit the salad bar hard…
I won’t even begin to try to remember all the things that I piled onto this salad but I was stuffed all afternoon (almost uncomfortably so). I was also thrilled to see the return of kombucha. A few months ago there was a recall on kombucha due to questionable alcohol content. There has been a serious void in my life without kombucha. Every time I’m in Earth Fare I check to see if it’s back yet and yesterday it was! Honest has recently launched its own line of kombucha teas. I drank every last sip!
I opted to sleep in until 7 a.m. yesterday rather than go to ashtanga. I told myself I would just go to the evening class instead. Last night’s class was a huge reminder of why I prefer practicing ashtanga in the morning. Due to the insane amount of twisting and binding in ashtanga, I like to practice on an empty stomach. My stomach felt too full last night (even though I had not eaten since lunch and it was 7 p.m.) and my practice was uncomfortable. I wasn’t even able to get into some of the poses that I normally do. I think sometimes when I do late evening classes I have already given so much during the day that I don’t have much to offer for my practice. Does that sound weird? Bleh…it was frustrating. I am definitely a morning yogi.
Luckily, my sweet husband had dinner coming off the grill when I got home.
Balsamic grilled chicken breasts topped with blue cheese, grilled sweet potatoes and sliced heirloom tomatoes.
Don’t even ask my why or how but I was craving this after dinner.
Hot chocolate! Maybe the promise of Fall right around the corner inspired this?
I’m home for lunch right now and about to hit “publish” and head back to work. I created this bowl of delicious randomness for lunch today.
I started pulling things out of the fridge and putting them in a bowl. Bed of spinach topped with leftover quinoa and black beans, diced avocado, grape tomatoes, heirloom tomatoes, greek yogurt, salsa and hot sauce.
Hope you all are having a great week. I’m counting down the days until the long weekend. Looking forward to my long run (no lie!), Georgia football, serious time in the yoga studio and hanging out at home!

HOnest tea kombucha is good but still missing my GT Synergy, sigh.

Any recommendations for a beginner runner? I workout a lot but running has never come easy.
Also wondering how you deal with cravings (if you get them) …I find that when I get really hungry or stressed I go for the carbs or sugar.
Would love any tipes you may have.
