7-Day Green Smoothie Challenge, Day 4…annnnd another green smoothie breakfast. I might get crazy tomorrow and have oatmeal for breakfast and a smoothie for lunch or afternoon snack! ๐
True to my word, this was another new combination compliments of my freshly stocked freezer.
I picked up frozen pineapple, mango and peaches. Here’s what went in the blender today…
6 ice cubes, crushed
1 cup unsweetened almond milk
1/2 banana
1/4 cup frozen pineapple
1/4 cup frozen mango
A few peach slices
1 cup kale, stems removed
1 cup spinach
The best part about this smoothie is that it packed quite a punch of fruits and veggies but only came in around 200 calories. I usually aim for 400-500 calories for my breakfast so I added this.
A coconut banana muffin (I’m going to post the recipe soon – SO GOOD!). One half with sunflower seed butter and the other with Justin’s Maple Almond.
I ate the muffin at home and took the green smoothie to go. I drank it at my desk as I dove into emails for the day. (And yes, that is my work uniform…even for my new manager position. It’s amazing.)
I came home for lunch and enjoyed the leftover Greek couscous outside. I added in some leftover eggplant and topped it with hummus and Greek yogurt. I added some pita chips on the side for dipping. After lunch I couldn’t keep my hand out of the bag of Emily’s Hungrynola. It’s becoming a problem. I may finish two bags in one week!
I worked for a couple more hours and then set out for a run. It was beautiful in Charlotte today so I covered a little over 4 miles. After my run I booked it over to the Y to teach BodyPump. My legs were screaming during squats and lunges but the workout was great. I love that strength training burn.
Sullie says have a happy Friday! And good thing she is so cute because every single time I let her out she comes in covered in those pollen pods from the oak trees in the yard. I am brushing her multiple times a day and sweeping every time she comes in. Ahhh!!!
Finally, don’t forget to check out my challenge partner Katherine’s blog, Real Food Runner. She’s got some awesome photography and recipe ideas for smoothie week!
OMG isn’t that Justin’s maple almond butter SO AMAZING?
yes! it’s my fave!
Oh Sullie, you adorable pup, you!
I can’t express how envious I am of that being your work uniform! That’s amazing. Not only is it comfortable, but now you have a great excuse to buy really cute workout clothes instead of wearing worn out old t-shirts (like I find myself doing half of the time)!
i know! i live in lululemon! ๐
I LOVE that almond butter!
Ahhhh Sullie has got to be the most adorable pup ever!!! She is so darn cute and I love how she always looks like she’s smiling ๐
Love her furry toes. Can’t wait for the muffin recipe. I love the sweetness of pineapple in my smoothie.
Ohhhh… I can not wait to get the recipe for the muffins! Also Sullie is such a cutie! love the pictures of her huge smile ๐
That smoothie looked so refreshing! MIne today was a WINNER!
Spinach, 1 orange, frozen banana, vanilla almond milk, flax, hemp protein powder and 6 ice cubes.
It makes 1 HUGE but delicious smoothie. The hint of orange great. Thanks for this wonderful challenge!
yum! i’ve never added orange to my smoothies but that sounds great!
I love Sullie’s smiles!
You can add oatmeal to a smoothie (oatmeal, milk/yogurt/protein powder, nut butter, banana, etc).
i tried that a couple of weeks ago for the first time when i was using the vitamix at work!
Love the Sullie pics!
I’ve been adding hemp protein to my usual smoothie recipe and I really like it! It’s interesting to see how many variations everyone is making with the green smoothies. I’m glad to get more ideas for my breakfast smoothie as the weather warms up!
i know! i love all the ideas i’ve been getting from everyone sharing recipes.
Sullie is adorable! Looks like she’s smiling at you in that last photo.
Best uniform EVER!!! Still loving green smoothies over here!
I can’t wait for the recipe for those muffins. They look like they’re super moist and yummy!
FAB uniform–wish that was mine ๐ loving my green smoothies!!
Jealous of your work attire ๐ Dressing like that would make me wanna get up and workout at any moment during the day!
Sullie is so cute..I’m having to brush my little pup off, too, after she goes out. She’ll sniff the ground then look up at me with her face covered in pollen ๐
it’s so nice and i can get up and workout anytime. sometimes i get sick of sitting in front of the computer so i’ll head out for a quick run. it’s lovely!
I can’t wait for the coconut banana muffins. Those sound really good!
I had to go ahead and get my golden’s hair cut. She loves to track in twigs, pollen, whatever but it’s really hot in ATL so she feels much better. Love the fruit combo in the smoothie!
i should think about having sullie’s hair cut this summer. i think it’s going to be a brutal one since our winter was so mild.
Do you use fresh or frozen spinach/kale in these smoothies? I didn’t get my act together for the challenge, but want to try to get into making these after a much needed trip to the farmers market and with the hot summer months ahead (:
i use fresh but i did buy some frozen to try because i’ve heard that it thickens up the texture a bit. you’ve got all summer to get your green smoothies in! ๐
Well, I wasn’t quite ready for the green smoothie challenge, since I am not a big smoothie fan and I have never had a green smoothie, but I was inspired by your challenge to actually try one last night. It was so good! Perfect after my 5-mile run. I did spinach, skim milk, Greek yogurt, frozen banana, frozen strawberries, chia seeds, and a little honey. I will definitely keep experimenting! Thanks for inspiring me to try new things!
YAY! i love when people try green smoothies for the first time. sounds like it was a perfect recovery drink for you.
i’m generally not a huge smoothie drinker either because i prefer to eat my calories but they are nice pre- or post- workout…especially when you can sneak a serving of greens in there too!
Nice dog. She’s so lovely.
I wonder about something in your green smoothie. From what I know, mango, pineapple and peach are very sweet fruits that should not be good for health. Could you tell me why you choose them and what is the fact behind this. thank you ๐
my opinion on sugar from fruit is that it is natural and the sugar from it isn’t like eating cookies and candy. i don’t consider fruit to be “unhealthy” ever and eat any types of fruit that i like.
Your smoothie sounds delicious! Ive been eating the same โsmoothie bowlโ for lunch everday, I just cant seem to switch it up, its way too good. I put unsweetened almond milk, chocolate protein powder, banana, spinach and 1 tbl of peanut butter. Yum!
i have never tried the smoothie in a bowl thing but your mix sounds awesome!
Sullie is adorable!! And I want your job…I get SO tired of wearing suits every day to work. And heels ๐ I want to be comfy too!
i feel your pain. i wore business clothes for six years! i finally quit wearing heels the last two years i worked. although i will say it’s a major occasion now when i put on jeans and i cannot even remember the last time i had on a skirt or a dress.
She is adorable! Where is your hubby?? I haven’t seen him on the blog in a while!!!
I cannot wait for the Coconut Banana Muffin recipe! It looks so fluffy and delicious! I am loving all of your green smoothies. So many varieties ๐
Your green smoothies always look so appetising! That’s quite a skill to know the calories, nice work. I wouldn’t have a clue about that kind of stuff unless it’s on a food’s label.
Sullie is gorgeous, that last photo of her just makes me want to reach down and give her lots and lots of pats.
Your recipes are a blast (though I am not a huge fan of green drinks , i have this irrational fear that my face would be the same colour after imbibing them).
Thanks for sharing your recipes, training and pictures of your ever lovable Sullie . Inspirational stuff
Hi Jen,
Just have a question :/
I am really sorry for my ignorance but what strikes me with majority of US-healthy food bloggers is that you use plenty of frozen fruits. Is it a trend or any other reason?
hi agatha – i use fresh fruit 95% of the time but during the smoothie challenge i wanted to use some fruits that are not in season so i picked up some frozen fruit at the store.
sullie is the cutest!!!
i’m so, so jealous that lulu is your work attire!
