The big day is finally here! Monday is the grand opening of Metro CrossFit & Training Center! I spent most of the afternoon/evening working to wrap up last minute tasks – everything from stocking the locker rooms with toiletries to sending confirmation emails for the preview classes to assembling Ikea stuff. This week is going to be crazy but I can’t wait to celebrate on Friday at our grand opening party. It’s so cool to be a part of this experience! I’m learning a ton.
Breakfast before teaching yoga was plain Greek yogurt with honey, bananas, blueberries, blackberries and strawberries.
I had an egg scramble on my mind after teaching. I wanted to use my farmers market veggies. I sautéed heirloom tomatoes, zucchini, red pepper and spinach and then added an egg, some fresh herbs and grated manchego cheese. Topped with some avocado and served with toast and a slice of watermelon.
And true to form I panicked about everything I had to do after I finished my brunch and instead of starting to work, I made granola.
Honey, Fruit and Nut Granola
2 cups oats
1 teaspoon cinnamon
1/2 teaspoon kosher salt
1/4 cup canola oil
1/3 cup honey
1 cup shredded coconut
1/2 cup (or more) dried fruit (I used golden raisins, cherries and cranberries)
1/2 cup (or more) nuts (I used almonds, pecans and peanuts)
1/2 teaspoon vanilla
Preheat oven to 350 degrees. Mix together all ingredients in a bowl until oats are coated and everything is well combined. Spread on a rimmed baking sheet and bake for about 12 minutes. Stir and return to oven for 5 minutes. Stir again and bake for 5 more minutes. Let cool completely and store in a airtight container.
I’ve received some comments that you haven’t seen Sullie lately. She’s her normal cute self. I especially love it when she uses her paw as a chin rest. So sweet.
Dinner tonight was pasta with vodka sauce with shrimp and pancetta. Based on this recipe. Salad on the side.
