The final week of Green Smoothie April is here! I have to admit that week three passed in a haze but I did have one outstanding smoothie recipe that I must share!
I made this AMAZING green smoothie that features a coconut water base and no bananas! I’ve received several requests for green smoothies sans banana and this is the ticket! It’s also dairy and nut free!
Banana-less Coconut Water Green Smoothie
1/2 cup frozen mango
1/2 cup frozen pineapple
1/2 cup coconut water
1/2 cup coconut milk (or almond or soy or sub all coconut water)
1 cup baby kale or baby spinach
Squeeze of lime juice
1 teaspoon chopped fresh ginger (optional)
Place all ingredients in a blender and blend 1-2 minutes or until very well combined.
Yield: 1 smoothie

Day 15
A very simple mix of banana, baby kale, almond butter, dates, cinnamon and coconut milk. Let me tell you, keeping the green smoothie super simple is one of the huge keys to making a good tasting, good looking green smoothie.
Day 16
It was 32 degrees outside the morning I drank this smoothie! I was freezing photographing it outside. I need spring to be here to stay!!! I mixed this smoothie up by adding fresh mint from my garden. It totally changed the flavor of the smoothie in a great way!
Day 17
I drank this green smoothie at 7 a.m. and had to make 2 eggs at 10 a.m. I was starving this day!
Day 18
Blueberry peach green smoothie with my dad’s homemade sourdough, butter and strawberry jam.
Day 19
You just can’t go wrong with a PB & J + Spinach smoothie.
Day 20
I can’t remember! I drank this Sunday morning before teaching yoga and as an appetizer for my Easter candy! 🙂

I made a smoothie today with coconut water, too. I added mango, banana, coconut water, spinach, and wheatgrass powder. It was delicious and so refreshing after a hot run
I had a very tasty smoothie with mint a few weeks ago—cucumber, blueberries, mint, and grape juice. I can’t remember if there was anything else (banana or milk). So yummy!
Pineapple and Mango are two of my favorite fruits to add to smoothies because of the texture! They make it so creamy and frothy 🙂 YUM!!
PB&J smoothies are always my favorite!
I had a quick question for you about the vitamin and how you make all your smoothies. I recently bought one and have been just experimenting with it. I love the idea of adding dates for natural sweetness but don’t know when to add them in/ what dial to use on the vitamix. I read in the vitamix cookbook the order you put the ingredients in matters and so I was wondering do you put the dates in first or in the middle and do you (depending if you have the same model as I do) always use the “frozen” dial option or just use the normal blend with options 1-10 for speed? Sorry if this is jibberish I just have been doing the normal ice, water, protein powder, and spinach mix every am and wanted to try some new things. Thanks!!!
