Good morning and happy Friday!
From Florida! I made a secret trip down on Wednesday night to surprise my mom for her birthday. And my dad and I successfully pulled it off! She had absolutely no clue that I was coming and was so surprised when I walked in the door with my dad. I’ve been soaking up this quick trip and visiting with them. I’m heading back to Charlotte today. Wish I could stay a few more days!
A few eats from the week to wrap up the week…
My dad’s homemade yogurt (get tutorial here) with his homemade granola (He just started making his own granola recently. It’s good!), bananas, berries and peanut butter. Always peanut butter.
Pressed wrap with deli chicken, cheddar, avocado, honey dijon and spinach. (Wrap tutorial here.)
Open-faced sandwich of mayo, avocado, deli chicken and cheddar on my dad’s sourdough.
Salad and a side of hummus and cheese flatbread.
Pastrami, avocado, mayo, dijon, tomatoes and pepper jack on sourdough that my dad baked just hours before lunch. I can’t even tell you how amazing it was! He’s sending me home with two loaves again. I am forever grateful.
Baked lemon herb Alaskan salmon with roasted sweet potatoes and broccoli. I started with this amount of broccoli and proceeded to eat the entire bunch of roasted broccoli. Why is it so good!? And for the record, I almost always dip my sweet potatoes in organic ketchup.
This dinner was my favorite of the week and was enjoyed on a cold, rainy day. Crockpot balsamic pork tenderloin with pureed cauliflower and braised red cabbage. I love red cabbage so much and this is going to be a winter side staple for me.
My dad had this simple dinner waiting for me when I got in late Wednesday. (I need to start traveling with my DSLR again and not just taking iPhone pics.) It’s a crustless quiche with ham and cheese and a side salad.
Off for a walk on the beach with my dad before heading back to Charlotte. Have a wonderful day!

Ah, soak up that Florida sun! But I guess I can’t complain too much here in NJ (for now), it’s been so sunny the last 2 days! Haha! (Thankfully).
Sounds weird, but dip your salmon in a bit of ketchup too 😉 It’s amazing!
Your dad is quite the cook! Homemade granola is my favorite 🙂 I’m scared to try baking bread but I think it would be such a fun skill to have. Have a great weekend!
He really is! I think that’s where I get my love for cooking and certainly any talent I have for it!
I LOVE all the sourdough bread…and I love how much your Dad cooks…Home cooked meals by parents are so comforting and made with lots of love. I love my Mom’s homemade meatballs and spaghetti…It’s my favorite and always will be.

I don’t see a link to your Dad’s sourdough bread. Unless I am missing it, perhaps this could be his next tutorial? The sand in Florida looks beautiful – so fun to surprise your Mom!
I love EVERYTHING about visiting my Parents. My Dad is also the best cook and I cannot pick a favorite – lasagna, bread (do all Dad’s make the best bread?), apple dumplings, fried chicken, the list goes on and on. I think I just gained 10lbs thinking about home!!
Your dad has got skills in the kitchen! Your mom is a lucky lady !!
I feel like everything tastes better when your parents make it! I’m fortunate in that I live not even a half a mile away from my mom so we’ll do dinners together all the time. She’ll invite me over and will always have wine, cheese, and (usually) guacamole waiting! Nothing says “I love you” more than that!
So I am staring longingly at all this good food, but for some reason i am fixated on the salad dressing!! What is that? It looks sooo tasty!
it’s a tahini balsamic. it is good! we make it at the yoga studio.
